Pumpkin Cookies! - How to Make Pumpkin Walnut Chocolate Chip Cookies - Holiday Cookies - MANCAKE
Pumpkin Walnut Chocolate Chip Cookies are one of my all time favorite cookies! I have been making them for years and always get requests for them every time fall rolls around. Amazingly soft, crispy where a cookie needs a little crisp, stupendously pumpkin-y, and just the ideal blend of Autumn spices.

These easy pumpkin cookies are one of my all time favorite fall desserts. I have been making them for years and always get requests for them every time fall rolls around. They literally melt in your mouth.
The best thing about these pumpkin chocolate chip cookies is that they are very easy to make. Just mix everything together, scoop the batter onto a pan, and bake.

Chocolate Walnut Chocolate Chip Cookies
▷What You Need
2 mixing bowls
Hand mixer
Hard rubber spatula
Whisk
1 tablespoon size triggered scoop (optional)
Cookie sheet
Parchment paper or silicone baking mat
▷Ingredients
2 cups all-purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
1/4 tsp ground ginger
1/2 tsp allspice
1/8 tsp ground cloves
1 & 1/2 sticks butter, melted
2/3 cup light brown sugar
1/2 cup granulated sugar
1 tsp vanilla extract
1/3 cup pumpkin puree
1 tsp vanilla extract
1 cup chocolate chips for cookie dough
1/2 cup chocolate chips for topping baked cookies
2/3 cup walnuts
▷Directions
Whisk together the flour, baking soda, baking powder, salt and spices into a large bowl. Set aside.
Mix the melted butter and both sugars together in bowl.
Mix in the vanilla and pumpkin.
Add the flour mixture in then mix until just combined.
Fold in 1 cup of chocolate chips followed by 2/3 cup walnuts.
Cover and chill for at least 30 minutes. You can also make this cookie dough ahead of team and let chill in the fridge. When ready to bake, set bowl on counter while oven preheats to allow the dough to soften and be able to be scooped with ease.
Preheat oven to 350F. Scoop our tablespoon sized balls then roll between your palms.
Place balls about 1 inch apart on a parchment paper lined baking sheet.
Bake at 350F for about 10 minutes.
Once baked, remove from the oven and place reserved chocolate chips onto each cookie.
