How To make Mocha Walnut Cookies
1/2 c Butter
3/4 c Sugar
1/4 c Brown sugar; packed
1 Egg
1 1/2 c Flour
2 tb Instant coffee powder
No crystals 1 ts Baking powder
1/2 ts Salt
1/2 ts Cinnamon
2 ts Vanilla
1 c Walnuts; finely chopped
12 oz Semi-sweet chocolate chips
Preheat oven to 350~F. Cream butter. Add both sugars and beat well. Add egg and mix well. Add flour, coffee powder, baking powder, salt, cinnamon, vanilla, and 1/2 cup walnuts. Mix well. Wrap dough in wax paper and chill thouroughly in refrigerator (at least two hours). Remove dough from refrigerator. Using rounded teaspoonfuls of dough, shape into balls using palms of hands and place 2" apart on an ungreased cookie sheet. Bake 12-15 minutes. Remove cookie sheet from oven and working quickly place 3-4 chocolate chips in the center of each hot cookie. When chocolate has softened, spread over top and sprinkle with balance of walnuts. Remove to wire rack and cool. -----

With a crisp on the outside and chewy on the inside and the crunch from the walnuts and pieces of milk chocolates throughout. And they are so simple to make. Walnuts 50g
Egg 80g
Brown sugar 40g
Vegetable oil 15g
Cake flour 110g
Cocoa powder 20g
Almond powder 30g
Baking powder 3g
Salt 1g
Chocolate drops 30g
▣ Baking:175℃/347℉ ⇨20min
160℃/320℉ ⇨25min
▣ Method:
1. Bake the walnuts at 180℃/356℉ for about ten minutes in advance and set aside to cool.
2. Mix the weighed whole egg, oil and sugar well.
3. Sift all the powders, add them to step 2 in turn and mix into a dough.
4. Add the walnuts and baking chocolate drops cut to the right size and knead into a dough.
5. Sprinkle some bread flour on the surface to prevent sticking, and organize into the right size according to your preference. Mine is 25×10cm.
6. Bake in the oven for twenty minutes, remove, cool, slice, and bake a second time.
7. After two baking, so that the cookie water baked dry, to achieve a crisp texture.
8. Cool, then pack in an airtight jar. Enjoy anytime!

Ingredients:
Cake:
175g butter
175g brown sugar
3 whisked eggs
45ml (3Tbsp) espresso
175g flour
10g (2 Tsp) baking powder
pinch of salt
120g ground walnuts
walnuts and chocolate coffee beans for decoration
Frosting:
125g butter
200g powdered sugar (icing sugar)
15ml (1 Tbsp) espresso
4 drops vanilla extract
Preparation:
Cake:
Mix butter and brown sugar
Add eggs and espresso and mix well
Add flour, baking powder, salt and ground walnuts while mixing
Divide into two 20-cm baking pans (8 inch)
Bake at 180C (350F) for 20-25 mins
Cool down
Frosting:
Mix butter and powdered sugar
Add espresso and vanilla extract
Assembly:
Spread half of the frosting over the first cake.
Add second cake on top and spread remaining frosting over top and side of cake.
Decorate with walnuts and chocolate coffee beans

Serves 4
Preparation Time:8 hours 30 minutes
Cooking Time:30 mins (excluding pre-heat time)
Ingredients:
1) 100 grams wheat flour
2) 40 grams chopped walnuts
3) 200 grams dark chocolate cut into small pieces
4) 60 gram butter (at room temperature)
5) 30 ml milk
6) 70 grams brown sugar
7) 30 grams white granulated sugar
8) 1 tbsp curd
9) 2 tbsp instant coffee powder
10) 1/2 tsp baking soda
Steps:
1) In a large bowl, put butter,Add brown sugar, white sugar.
2) Whisk them with an electric hand mixer for 5-7 minutes.
3) After whisking for 7 minutes, mixture becomes fluffy and light in color.
4) Add wheat flour, baking soda,Add coffee powder, curd.
5) Knead them into a dough adding milk in small quantities at a time.
6) Dough should be sticky and of spoon drop consistency.
7) Now add chocolate chunks and walnuts and fold them in again.
8) Put the dough in a ziploc bag and refrigerate for 8-10 hours.
9) After 8 hours, remove the cookie dough from refrigerator.
10) Pre-heat Oven at 180°C.
11) Grease the baking tray with butter.Scoop out a small portion of dough.
12) Line up cookies dough on baking tray and put them in oven.
13) Put the tray on low rack and bake cookies for 15 minutes.
14) After the cookies are taken out of oven, transfer them to a rack and let them cool down.
Coffee and Chocolate flavored Walnut Cookies are ready.These cookies can be relished with coffee or warm milk
