How To make Herb Roasted Rabbit and Potatoes
4 lb Rabbit [cut into 8 pieces,
Rinsed & patted dry] 8 md Red potatoes [quartered]
24 lg Cloves garlic
6 tb Olive oil
4 oz Slab bacon, [rind removed
& cut into 1" cubes] 6 tb Fresh rosemary leaves OR
2 tb Dried rosemary
2 ts Coarsely ground black pepper
Coarse salt, to taste (optional) 6 Sprigs rosemary, for garnish
1. Preheat the oven to 400 degrees 2. Place the potatoes and garlic
cloves in a large shallow roasting pan. Sprinkle with 1 tablespoon of the olive oil, and toss to coat. Bake for 30 minutes. 3. While the potatoes and garlic are roasting, combine the bacon
and 2 tablespoons of the oil in a large skillet, and place over low heat. Cook just until the bacon begins to wilt. Then remove the bacon with a slotted spoon, and set it aside. 4. Saute the rabbit, in batches if necessary, in the skillet,
setting the pieces aside as they are browned. Reserve 2 tablespoons of the pan drippings. 5. Remove the roasting pan from the oven, and reduce the heat to 350
degrees. 6. Add the rabbit, rosemary, pepper, coarse salt, reserved pan
drippings, and remaining 3 tablespoons oil to the roasting pan with the potatoes and garlic. Toss thoroughly, and return the pan to the oven. Bake for 20 minutes. 7. Sprinkle the reserved bacon over the top, and bake until the
meat is tender and the vegetables are golden, another 20 minutes. 8. Arrange the mixture on a warmed platter, and garnish with the
rosemary sprigs.

S3E1 Whole Roasted Rabbit
Today we have some rabbit and roasted vegetables with gravy. I've said before that I love experimenting with new things when I cook. I've never cooked brussel sprouts before, and that's apparent in this one. The rest turned out well though! You have to be willing to make a few mistakes and occasional bad meals in order to find the best way to cook!
ROASTED RABBIT RECIPE
Americans are obsessed with eating lean meat, so how is it we have overlooked the rabbit! With virtually zero fat, rabbit is both lean and delicious. Having prepared it several ways, I have found this recipe to be one of my preferred ways to cook it. A very European style of preparing Rabbit in white wine, cream and lots of fresh herbs. Baked Rosemary Rabbit
Ingredients
1 ea. large white onion, thinly sliced
2 ea. lemons, thinly sliced
1 ea. cottontail rabbit, patted dry
1 ea. Lemon
2 Tbsp. olive oil
2 tsp dried rosemary
2 Tbsp. parsley, chopped
½ tsp ground cumin
1 head broccoli, florets cut into bite size pieces
Salt, pepper, and garlic powder to taste
Directions
Preheat oven to 350°F
Mix together the rosemary, parsley, and cumin.
Layer the onion and lemon on the bottom of a 9”x13” baking pan.
Lightly coat the rabbit with olive oil and rub inside and out with the rosemary mixture.
Put the prepared rabbit into the pan, favoring one side.
Bake for 20 minutes, uncovered.
Remove pan from the oven. Fill the remainder of the pan with the broccoli making sure it isn’t touching the rabbit.
Add a light drizzle of olive oil and a pinch of salt, pepper, and garlic powder to the broccoli.
Squeeze the remaining lemon over the rabbit.
Cover pan with foil and return to oven, checking every 10-15 minutes until you reach 160°F in the thickest part of one of the back legs. Use an instant read thermometer and make sure you don’t go through the meat or hit bone as these will affect your reading.
Plate and enjoy!
