RECIPES:
Banana Oatmeal Cookies:
- 2 Overripe Bananas
- 1 & 1/2 Cups Rolled Oats
- 1/3 Cup Frozen Blueberries
1. Preheat oven to 180°C and line a baking tray.
2. Mash bananas and mix in rolled oats.
3. Roll into cookies and press blueberries into the top.
4. Bake for 20 minutes, or until bottoms are browned and tops are golden.
Capsicum Hummus Boats:
- 6 Mini Capsicums
- 1/2 Cup Hummus
- 2 Tbsp Seeds
1. Slice capsicums in half and remove seeds and stem.
2. Fill capsicums with hummus and top with seeds.
Choc Stuffed Dates:
- 10 Pitted Medjool Dates
- 3 Tbsp Almond Butter (or choice of nut butter)
- 60g Melted Dark Chocolate
1. Slice open dates and fill with almond butter. Set in the freezer for 15 minutes.
2. Dip into chocolate and set in the fridge for 10 minutes.
Mini Zucchini Pizzas
- 1 Zucchini
- 1/4 - 1/3 Cup Tomato Paste
- 2 Tbsp Vegan Feta (or choice of cheese)
1. Preheat oven to 200°C and line a baking tray.
2. Slice zucchini into coins about 1-1.5cm thick and line on the baking tray. Bake for 5-10 minutes or until slightly tender.
3. Top zucchini with tomato paste and vegan feta. Place bake into the oven for 5-10 minutes or zucchini is tender and cheese is melted.
Choc Rice Cake Slice:
- 4 Thick Rice Cakes
- 1/4 Cup Peanut Butter
- 50g Melted Chocolate
1. Mix together melted chocolate and peanut butter in a small bowl.
2. Crumble rice cakes into a large bowl and pour the chocolate mixture on top. Mix well with your hands.
3. Pour into a lined baking tray and set in the freezer for 30 minutes to 1 hour. Slice and enjoy!

INGREDIENTS
---------------------
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup chia seeds
1/4 cup white sesames
1/4 cup black sesames
2 tbsp psyllium husk powder
(or 4 tbsp ground flaxseed)
(or 4 tbsp ground chia seed)
1 tsp coarse sea salt (adjust to your taste)
2 tsp dried oregano (or other herbs of your choice)
½ cup cold water
DIRECTIONS
------------------
1. Mix the seeds, psyllium husk powder, dried herb and salt together in a bowl.
2. Add in the water and mix everything well. Leave to rest for 15-20mins.
3. Spread the seed mixture on an ungreased baking tray (regular cracker thickness). Note: if the mixture still feels too loose at this stage, sprinkle a small amount of psyllium husk powder)
4. Bake in a 150C/300F preheated oven for 30-35 mins (or till crispy). Option to cut crackers half way into the baking time while the mixture is still slightly soft (10-15 mark).
5. Leave to cool for a few minutes and enjoy.
AVOCADO SPREAD
-----------------------
Chopped avocado
Vegan mayo (or vegan yoghurt)
A drizzle of extra virgin olive oil
Salt to season
Mix all ingredients together and that’s it!
