6 Veal chops 1/4 c EX virgin olive oil 1 ts Chopped fresh basil 12 ts Chopped fresh rosemary 1 ts Chopped fresh thyme 1 ts Grated lemon rind Salt & freshly ground pepper Place chops on platter. Combine oil, herbs and lemon rind and brush on chops. Season with salt and pepper. Leave on counter for 1 hour to marinate or up to 12 hours in refrigerator. Grill chops 4 to 6 minutes per side on high heat, depending on thickness of chops. They should be slightly pink when done. Remove from grill and serve. Serves 6. Note: Use Veal rib chops or Veal loin chops or Pork chops. -----

I like to use the new @bradleysmoker Herb Blend for this quick lunch. It’s a mix of thym, marjoram, rosemary, fennel, tarragon, basil, sage, shallots, chives and I usually like to add some chopped garlic and lemon zest to this mixture. I was impatient to eat, so I kept it simple for this one.

Veal Loin Chops with Mushroom Sauce
2 Veal loin Chops (Or pork chops or chicken breast) 1 Tbsp Garlic Butter (Or plain butter with some added garlic) 1 Pt Sliced Mushrooms (Any mushroom you prefer) 1 1/2 C Chicken Broth 1/2 C Cooking Cream Salt and Pepper
Saute chops in garlic butter until brown on both sides. Remove from pan and set aside. Add mushrooms and saute until brown. Add chicken stock and cream. Reduce sauce until about 50% and return chops to pan. Continue to reduce until the consistency of heavy cream.
Serve with rice, mashed potatoes or noodles and your favourite veggies.
