Imperial Chicken Kabab
Ingredients
Chicken 1 kg
Ginger garlic paste 1 tbsp
Yogurt 2 tbsp
All spice 1 tsp
Roasted & crushed cumin 1 tsp
Turmeric ¼ tsp
Orange color ¼ tsp
Chili powder 1 tbsp
Vinegar 2 tbsp
Egg 1
Crushed coriander 1 tbsp
Salt 1 ½ tsp
Corn flour 4-5 tbsp
Paratha to serve
Tomato ketchup to serve
Method
Marinate chicken with ginger garlic, yogurt, all the seasonings, egg, corn flour, leave it for 2 hours, deep fry chicken for 20 mins without turning, serve with any chutney.
Iranian Ash
Ingredients
Boneless chicken cubes 400 gm
Rice ½ cup
Pigeon lentil ¼ cup
Raw macaroni ¼ cup
Yellow split gram ¼ cup
Pigeon peas ¼ cup
White kidney beans boiled ½ cup
Boiled chickpeas ½ cup
Oil ¼ cup
Onion chopped 1 cup
Tomatoes 2 blended
Garlic paste 1 tsp heaped
Turmeric ½ tsp
Salt 2 tsp
Water 8 cup
Spinach finely chopped 2 cups
Dill chopped ½ cup
Coriander leaves chopped ½ cup
Mint leaves 20
Lemon juice ¼ cup
Stock cube 1
Method
Heat oil in a pan, add chopped onion, fry till soft, add in garlic, chicken cubes, fry for 5 mins, add turmeric, blended tomatoes, salt, stock cube, boiled kidney beans, moong ki daal, arhar ki daal, rice, boiled chickpeas, raw macaroni, and 8 cups water, cover and cook for 20 mins, add in all the green vegetables, lemon juice, continue cooking till thick, before serving heat ¼ cup oil, fry 4 tbsp chopped onion until golden, add to the ash, serve it as a soup.

Ingredients
Roll patti 12
Chopped almonds / pistachio 1 ½ cup
Caster sugar 3 ounce
Butter 6 ounce
Egg for brushing 1 - 2
Green cardamom 1 tsp
Ingredients for syrup
Sugar ¾ cup
Water ½ cup
Method
Cook water and sugar together, grease your 9 inch square pan with butter very well, spread with 1 roll patti, again brush with softened butter and beaten egg, cover with another patti, now top with almonds and pistachio grinded, continue keeping the roll patties on top of each other brushing each patti with butter and beaten egg, keep putting patti on top of each other till you have completed 2 dozen patties, now cut into a diamond shape and bake in a pre-heated oven for 30 mins on 180 d, remove when golden and crisp. Lastly top with prepared sheera and serve.
