Chicken mince balls cooked in spicy yogurt gravy.
CHICKEN BALLS IN SPICY GRAVY
Ingredients
400 grams chicken mince
5 dried red chillies
4 black peppercorns
1 teaspoon fennel seeds
2 cloves
½ inch cinnamon
1 tablespoon coriander seeds
2 tablespoons Thai chilli paste
1 tablespoons finely chopped fresh coriander leaves
Salt to taste
1 egg
1 tablespoon oil
1 bay leaf
1 black cardamom
1 tablespoon minced garlic
1 tablespoon minced ginger
1 cup onion paste
½ teaspoon nutmeg powder
½ teaspoon garam masala powder
2 cups yogurt
Method
1. Grind together black peppercorns, fennel seeds, cloves, cinnamon, coriander seeds and cumin seeds to a fine powder.
2. Grind together chicken mince, Thai paste, coriander leaves, salt and egg to a smooth paste.
3. Heat oil in a non-stick wok, add bay leaf, cardamom, garlic and ginger and sauté till fragrant.
4. Add onion paste and sauté for a minute.
5. Add ground powder alongwith nutmeg powder and garam masala powder and sauté again.
6. Add salt and some of the yogurt and mix well.
7. Add ½ cup water and mix well.
8. Mix remaining yogurt and ground paste in a bowl.
9. Dampen your palms with water, take a portion of the mince mixture and shape them into balls and add to the pan. Cook for 8-10 minutes.
10. Serve hot garnished with coriander leaves and serve immediately.

Chicken Kofta Curry
Prep time: 25-30 minutes
Cooking time: 1hr 15-30 minutes
Serves: 4-5 people
Ingredients:
Kofta
CHICKEN | चिकन 500 GRAMS (BREAST)
ONION | प्याज़ 1 NO. (FINELY CHOPPED)
SALT | नमक A PINCH
GREEN CHILLI | हरी मिर्च 4 NOS. (CHOPPED)
GINGER | अदरक 1 TBSP (CHOPPED)
GARLIC | लेहसुन 1 TBSP (CHOPPED)
MINT | पुदीना 10-12 LEAVES (CHOPPED)
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
LEMON JUICE | नींबू का रस OF HALF A LEMON
GARAM MASALA | गरम मसाला ¼ TSP
SPICY RED CHILLI POWDER | तीखी लाल मिर्च पाउडर 1 TSP
CORIANDER POWDER | धनिया पाउडर ½ TSP
CUMIN POWDER | जीरा पाउडर ¼ TSP
BLACK SALT | काला नमक ¼ TSP
BLACK PEPPER POWDER | काली मिर्च का पाउडर A PINCH
SALT | नमक TO TASTE
GHEE | घी 1 TBSP
LIVE CHARCOAL | जलता हुआ कोयला
GHEE | घी
Gravy
OIL | तेल 2 TBSP
GHEE | घी 2 TBSP
WHOLE SPICES
CUMIN SEEDS | जीरा 1/2 TSP
GREEN CARDAMOM | हरी इलायची 3 NOS.
BLACK CARDAMOM | बड़ी इलायची 1 NO.
CINNAMON STICK | दालचीनी 1 INCH
BAY LEAF | तेज पत्ता 1 NO.
ONION | प्याज़ 4 MEDIUM SIZED. (CHOPPED)
GINGER GARLIC GREEN CHILLI PASTE | अदरक लेहसुन और हरी मिर्च की पेस्ट 2 TBSP
POWDERED SPICES
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
DEGI RED CHILLI POWDER | देगी मिर्च पाउडर 1 TBSP
SPICY RED CHILLI POWDER | तीखी लाल मिर्च पाउडर 1 TSP
CORIANDER POWDER | धनिया पाउडर 1 TBSP
CURD | दही 1/2 CUP
TOMATO | टमाटर 3 MEDIUM SIZED. (PUREE)
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
GREEN CHILLI | हरी मिर्च 2 NOS. (SLIT)
GINGER | अदरक 1 INCH (JULIENNE)
FRESH CREAM | फ्रेश क्रीम 3 TBSP (OPTIONAL)
ROASTED KASURI METHI POWDER | भुनी हुई कसूरी मेथी का पाउडर A LARGE PINCH
GARAM MASALA | गरम मसाला A PINCH
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Cut the chicken into small pieces & then mince it using a knife or a chopper, you don’t have to chop it finely, the chicken should remain slightly coarse.
Place a muslin cloth over a bowl & add the chopped onion & a pinch of salt, mix it with your hands & let it rest for 2-3 minutes.
After letting it rest squeeze out all the water you can from the onions.
Transfer the minced chicken into a large bowl, add the onions you prepared earlier followed by green chillies, ginger & the remaining ingredients of the kofta, you can also add one egg as it provides extra softness.
Mix all the ingredients well with the chicken using your hands & then knead it slightly for 3-4 minutes until everything binds together.
Once everything comes together, you can add a smoky flavour to the marinade by placing a small bowl with live charcoal in the bowl & then pouring ghee over it & covering it for 3-4 minutes.
Then lastly add a tablespoon of ghee & incorporate it into the mixture, your mixture for kofta is ready.
Take a small portion of the mixture (30-35 grams) & form it into a roundel, shape all the koftas similarly.
Fry the koftas in moderately hot oil over medium high flame until light golden brown from all sides then transfer them into a sieve so that all the excess oil drips off, you don’t have to cook the koftas fully as they will also get some time to cook in the gravy.
Your koftas are ready, you can serve them as it is at this stage as an appetizer along with some mint chutney.
To make the gravy, set a kadhai over high heat & once it gets hot, add in the ghee & oil, let the oil heat up as well.
Further add all the whole spices along with the chopped onions, stir well & cook over high flame until the onions turn light golden brown.
Further add the ginger garlic & green chilli paste, stir well & cook further until the onions turn golden brown.
Lower the flame & add all the powdered spices along with a splash of hot water, stir well & then increase the flame, cook the spices for 2-3 minutes.
Then lower the flame again, whisk & add the curd into the kadhai & keep stirring it , then increase the flame to high again & cook the curd for 2-3 minutes.
Further add the tomato puree & salt, stir well, cover & cook over medium high flame over medium high flame until all the oil separates, keep removing the lid & stirring at regular intervals & add hot water if the gravy becomes too dry at any stage, this cooking process will take 25-30 minutes.
Once the gravy is cooked & all the oil gets separated, add the chicken koftas along with green chilli & julienned ginger, stir well & cook for 1-2 minutes.
Further add hot water hot water to adjust the consistency & cook for 3-4 minutes, the gravy should be not be too thick nor too thin.
Lastly add fresh cream, rosted kasuri methi, garam masala & fresh coriander, stir well.
Your chicken kofta curry is ready, serve it with tandoori rotis, naans or parathas.

BUTTER CHICKEN MEATBALLS
Preparation time 10-15 minutes

Ingredients
For Sauce
1 large Onion, chopped, प्याज
2 medium size Tomato, chopped, टमाटर
1 tbsp Butter, मक्खन
1 tsp Oi, तेल
½ inch Ginger, chopped, अदरक
2 no Green chilli, chopped, हरी मिर्च, कटी हुई
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
1 tsp Coriander powder, धनिया पाउडर
Water as required, पानी
¼ tsp Dried Fenugreek leaves, crushed, कसूरी मेथी
1 tbsp Cashew Nut, chopped, काजू
1 heaped tbsp Tomato ketchup, टोमेटो केचप
1 tbsp Butter, मक्खन
¼ tsp Sugar, चीनी
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
For Chicken Balls
250 gms Chicken, mince, चिकन
½ cup White bread crumb, ब्रेड क्रंब्स
Salt to taste, नमक स्वादअनुसार
1 ½ heaped tbsp Prepared masala, तैयार किया हुआ मसाला
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ tsp Garam masala, गरम मसाला
1 tbsp Poha powder, पोहा पाउडर
2 tbsp Coriander leaves, chopped, धनिया पत्त कटा हुआ
Oil for frying, तेल
For Butter Chicken Balls
1 tbsp Butter, मक्खन
1 tbsp fresh Cream, मलाई
1 tsp Coriander leaves chopped, धनिया पत्त कटा हुआ
Fried chicken balls, चिकन बॉल्स
For Sauce
1 tbsp Butter, मक्खन
⅓ cup Prepared gravy, तैयार की हुई ग्रेवी
Process
For Sauce
In a thick bottom pan, add butter, oil, ginger, green chilli, onion, salt to taste, degi red chilli powder, turmeric powder, coriander powder and saute it well.
Add tomato and little water and cook on medium flame.
Add dry fenugreek leaves and mix well. Remove spoonfull prepared masala and keep it aside for further use.
In the remaining masala, add cashew nut, tomato ketchup, butter, sugar, degi red chilli powder and mix everything well.
Once it's cool down, blend it into a smooth puree. Keep it aside for further use.
For Chicken Balls
In a large bowl, add chicken mince, white bread crumb, salt to taste, prepared masala, degi red chilli powder, garam masala, poha powder, coriander leaves and mix everything well.
Heat oil in a kadai and in meanwhile make bite size balls from the mixture and deep fry them in medium hot oil until golden brown and crispy.
Remove on an absorbent paper and then serve them with prepared gravy.
For Butter Chicken Balls
In a pan, add butter, let it melt, add fried chicken balls, fresh cream, coriander leaves and saute it well.
For Sauce
In a pan, add butter, let it melt and add the prepared gravy and mix well.

Ingredients for Chicken Kofta Curry
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Chicken Mince (Keema) - 250 gms.
For Meatballs/ Kofta Mix:
- Salt- 3/4 tsp
- Pepper powder- 1/2 tsp
- Breadcrumbs- 6-7 tbsp
- Onion, fine chopped- 3 tbsp
- Green chillies chopped-3-4
- Coriander leaves chopped- 3 tbsp
- Garlic, fine chopped- 2 cloves ( 1 tsp)
- Egg - 1 small
FOR THE GRAVY:
Whole Spices:
- Green Cardamom- 4
- Cloves- 4
- Cinnamon- 2
Spice Powders:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1.5 tsp
- Kashmiri Chilli Powder-1/2 tsp
- Coriander Powder- 2 tsp
- Cumin Powder- 1/4 tsp
- Garam Masala Powder- 3/4 tsp
Other Ingredients:
- Grated Onion- 100 gms (2 small)
- Ginger Garlic paste- 2 tsp
- Readymade tomato purée or paste- 4 tbsp
- Whisked Curd/Yogurt- 3 tbsp
- Green Chillies, sliced- 3
- Refined Oil- 3 tbsp + 2 tbsp for pan- frying the meatballs
- Coriander leaves, chopped- 2 tbsp
Preparation:
- Chop the onion to give you 3 tbsp to be added to the kofta mix.
- Also peel & chop the garlic, green Chillies and coriander leaves.
- For the gravy, grate 2 small onions and set aside. You can also easily make grated onion in the grinder. Chop the onion into small cubes and add to the grinder. Pulse/grind few times to get roughly grated onion. Do not make into a paste.
Making the Chicken Meatballs/Koftas:
- To prepare the mix for the chicken meatballs/koftas, take the Chicken mince in a bowl and add all the other ingredients. Mix all the ingredients by hand and set aside for around 15-20 mins.
- Now form the meatballs/Koftas as shown in the video, taking around 20 gms of the mix for each. Should make around 20 meatballs.
- To pan fry the meatballs, heat 2 tbsp oil in a pan and place them side by side. Do not crowd the pan and fry in two batches.
- Fry the meatballs on medium heat for around 6 mins stirring these often so that these get browned uniformly.
- Remove and repeat for the rest. Set aside.
Making the Curry/Gravy:
- Heat oil in a pan and add the whole spices. Once it splutters, add the grated onions. Fry on medium heat for 4-5 mins and then add the Ginger Garlic paste. Give a mix and fry on medium heat for around 2 mins till the raw smell is gone.
- Now add the tomato puree, 2 tbsp water and give a mix. Mix and fry on medium heat for 2 mins.
- Now add all the spice powders and 1/2 tsp salt and give a mix. Add 3 tbsp water, mix and fry on medium heat for 2-3 mins till oil separates.
- Switch off the heat and add the whisked curd/plain yogurt and the sliced green chillies & cook on low heat for 3-4 mins till oil separates. Now add 300 ml water and cover & cook on low heat for around 7 mins till the gravy is cooked.
- Remove the lid and add the fried meatballs, give a stir and cover & cook on low heat for 10-12 mins.
- Finally garnish with chopped coriander leaves.
- Serve with roti, naan or rice.
