Today I will show you A transform of buttercream, to butter and buttermilk, yogurt, and Irish soda bread.
The buttermilk is nearly the expired date. But don’t worried about it, just pour it into the blender, blend for about 10senconds. It is whipped. Then pour another bottle of cold water into the blender and blend for about 1 minute.
The butter is separated from the cream.
We got the butter and also got the buttermilk.
Shape the butter by hands and weigh it, it is heavier than estimated because there is water inside of it. You can put the butter on the heat, and let the water evaporate, then you can get butter without water.
Cover the buttermilk with a cloth and let it ferment at room temperature or in an oven with a cup of warm water.
I made it at room temperature,2 days later I got sour buttermilk.
Stir it to even and separate it into 2 batches. Pour 270g of it into a big bowl. We still have some left, pour milk into the smaller batch of buttermilk, also let it ferment for 1-2 days.
Then we got yogurt.
There is no sweetener in the yogurt, you can add some if you like.
Now I highly recommend you to check this recipe, which is Irish soda bread. It is a kind of bread, no need for any kind of cooking skills. For --I think --it is the simplest bread in the world.
The ingredients are simple and easy to be found, no kneading, no fermentation, all you need to make is just mix all the ingredients well combined, and put the mixture into the mold, just because there is so much water inside of it, so we need the mold to shape it.
Although it is simple, it still tastes amazing. Soda bread is always served with butter and jam, also good with cheese and yogurt.

今天说说这瓶快要过期的重奶油,和黄油、白脱奶、酸奶、以及爱尔兰苏打面包之间的关系。
这瓶重奶油每100毫升有48克的脂肪,换言之,250毫升就有120克的黄油。把它倒进料理机里,一滴也不要浪费哦。
我用的是破壁机,速度很快,只需要十秒钟,重奶油就被打发了。
用重奶油的瓶子装满冷水,摇晃几下,也是为了不要浪费,重新倒进料理机里,继续搅拌。不到一分钟,水油就分离了,然后我们得到了黄油。
黄油现在还泡在水里。
准备点冰块,放一个空碗,滤去水分,这滤出来的乳白色液体是白脱奶,在欧美超市很常见。它的用途,一会儿我会介绍给大家。
我们先给黄油整个形,用冰水沾湿双手,然后把黄油捏成球形,直接放在容器里保存,因为含有水分,所以大于120克,如果放在炉子里加热,蒸发出水分,就可以得到无盐黄油。
下面我要说说白脱奶的作用。刚分离出来的白脱奶尝起来像兑过水的牛奶,超市卖的有淡淡的酸味。给黄油盖上盖子,一会儿放冰箱保存。
再给白脱奶盖上一层干爽透气的布,让它发酵。室温发酵,或者放进烤箱加热水发酵都可以。
室温发酵大概需要两天,我们的白脱奶就变酸了。表面还有一层薄薄的奶油皮,轻轻用勺子把它搅拌均匀。
这碗白脱奶今天我要分两次用完。首先在大碗里倒入270克白脱奶,还剩下一点,大概几十毫升。
往里面倒入一大碗牛奶,利用白脱奶发酵的特性,带动鲜奶继续变化成酸奶。牛奶的量大约是白脱奶的10到15倍,过多的话,发酵时间不好控制,容易让酸奶发酵过度变质。
和发酵白脱奶也一样,你可以选择室温自然发酵或者放入密闭空间加热水发酵。
两天后,酸奶形成了,看到这里可能会有朋友问,用普通的酸奶可以这样发酵牛奶么?只要你用的确实是自然发酵而成的原味酸奶,理论上都可以。
看这个质地,是不是和我们小时候喝的瓶装酸奶很像?调上蜂蜜、糖或者果酱会很美味。
至于剩下的大部分白脱奶,我要用它做一个传统的爱尔兰苏打面包。
配料也极其的简单,如果没有全麦面粉也没有关系,可以换成等比例的面粉或者加部分燕麦。
在没有揉面机和即发酵母的时候,聪明的爱尔兰人利用小苏打遇酸膨胀起泡的原理发明了苏打面包。
这可能是世界上最简单的面包,因为不需要发酵、不需要揉面,手作的时间只需要五分钟或者更短。所以,要先打开烤箱,否则来不及预热。
我这个比例的苏打面包含水量极高,所以只能搅拌,不能手揉,反而让事情变得更简单。因为含水量高,所以要用模子,否则烤制的时候,面糊跑来跑去,最后就会烤成一个松软的饼,就不太像餐包的样子了。
当然为了颜值,最后可以撒点干粉,做个装饰。
0厨艺、不用手揉、不用发酵的面包——爱尔兰苏打面包就做好了。
如果你喜欢小苏打的味道,或者你讨厌复杂的配料和高难度的烘焙手法,那这款面包不容错过,你唯一需要注意的是,全程用冷水制作,因为小苏打预热也会提前发生作用。
外表看起来很像古朴的乡村面包,但是它散发着浓浓的小苏打芳香,让我们切开看看内里?
蓬松绵软的小苏打面包,自然保存3天,也可以放进密封袋进冷冻室保存,吃前回个温就可以了。
爱尔兰苏打面包和黄油果酱是绝配,当然也可以配上酸奶。

Irish Soda Bread - with yogurt, spinach, blueberries
Hi loves, today I made this soda bread with a little bit of spinach and blueberries in the dough. For the flour I used half almond flour and half plain wheat flour.
The bread itself has a rich flavour of greek yogurt, sea salt and sweetness from blueberries and spinach. The inside is moist and outside is crusty. It goes quite well with afternoon tea. I like trying new ingredients in baking. Wish you like it and let me know if have any new ideas!
