How To make Italian Meatball Cookies
1 c Shortening
1 1/2 c Sugar
3 Eggs
1 c Milk
1 ts Vanilla
5 c Flour
1 ts Cinnamon
1 ts Ground cloves
1 ts Nutmeg
3/4 c Cocoa
1 c Nutmeats; chopped
1 c Chocolate bits or chips
3/4 c Raisins
Cream shortening, sugar. Add eggs, milk, vanilla, then remaining dry ingredients. Add nuts, chocolate bits and raisins. Form small balls. Bake on greased cookie sheet at 375~F for 10 to 12 minutes. Makes about 10 dozen, more or less, depending on the size. -----

Recipe:
AMAZING ITALIAN COOKIES
Preheat oven to 375° F (100 C)
Cookie Dough:
3 cups flour (360g)
3 teaspoons baking powder (12g)
pinch of salt
1/2 cup vegetable oil (120ml)
1/2 cup sugar (100g)
3 eggs
1/2 cup milk (120ml)
1 teaspoon vanilla extract (5ml)
Mix the first 3 dry ingredients in a large bowl and set aside.
Mix oil, sugar, eggs and vanilla extract in a separate bowl with an electric beater or blender for one minute.
Add milk and blend for only 2-3 more seconds.
Stir the liquid mixture into the large bowl with dry ingredients. Drop by teaspoonful onto ungreased cookie
baking sheets. Bake 8-10 minutes.
Recipe makes about 3 dozen cookies.
Frosting:
1 1/2 cups confectioners' sugar, unsifted (150g)
1 teaspoon lemon extract (5ml)
1-2 tablespoons water (15-30ml)
Mix frosting until smooth and top cookies with frosting.

Recipe:
Cucidati Cookies (Sicilian Cookies by Clara)
FILLING
Boil 2 cups of water and add 1/2 cups sugar. Let cook.
3/4 cups shelled hazel nuts
1/2 cups shelled almonds
1/2 cups shelled walnuts
1/2 cups shelled pecans
Toast all nuts on cookie sheet separately (different nuts take different times to toast).
Grind together with nuts:
1/2 lb. diced candied fruit
1/4 lb. dark raisins
1/4 lb. light raisins
1/4 lb. dates (pitted)
1 orange with rind
1 dried tangerine with rind
2 lbs. figs or (2 packages or atleast 14 oz. apiece)
Mix well all the ground ingredients.
Add 1/2 or 3/4 of the cooled sugar water to make a nice soft mixture (be careful not to make it too soft).
Save the rest of the sugar water mixture.
Add 1/2 cup whiskey to ground ingredients.
Mix well and let stand overnight. Keep in a fridge or cool place.
You may need to add the sugar-water the next day.
DOUGH
10 cups flour
1 lb lard
1 1/2 cups sugar
1 cup cold milk
2 heaping table spoons baking powder
1 table spoon vanilla
12 eggs
Work flour and lard like you would pie crust.
Melt sugar in milk.
Beat egg and add vanilla.
When flour and lard are mixed well, add baking powder, then add the other ingredients and mix until you have a nice liable dough.
Let stand at least one hour, or this can be made the day before. Cover with a clean dish towel and put in the fridge or a cool place.
Roll dough.
Fill with filling (you can use a pastry bag). Cut and bake on ungreased cookie sheet at 350 until golden brown.
If you like icing, mix milk, powdered sugar and a teaspoon of vanilla (preferably white vanilla). Brush on cookies and sprinkle with little colored candies.

These cookies are an Italian tradition, especially during the holidays and special events. They are made with cocoa, coffee, walnuts, raisins and spices which bring all the flavors together into a mouth-watering, delicious cookie! My beloved mother, Santina, used to always make huge batches of her cookies when Christmas season began. Since her passing, I keep this tradition going with my own family and wanted to share this delicious recipe of hers with you! There are many variations, but this is the one my mother perfected on her own and it was loved by many. Oh, and by the way, this delectable cookie happens to be vegan! Recipe is below. SANTINA'S BISCOTTI SCURI - (dark cookies)
Preheat oven 350° F
3 1/3 cups flour
1 tablespoon baking powder
2/3 cup shortening
1/2 cup hot coffee
1/2 cup hot water
1 1/4 cup white sugar
1/2 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup coarsely chopped raisins
Icing:
1 1/2 cup confectioner's sugar
1 teaspoon vanilla extract
2-3 tablespoons water
Bake cookies in 350° oven for 10 minutes, until firm to the touch.
Makes 5 dozen cookies.

An easy and quick recipe for Italian Anisette Cookies! Some people refer to them as Italian Wedding Cookies as well.
INGREDIENTS:
1/2 Cup of softened butter
1/2 Cup of Granulated Sugar
2 Teaspoons of Anise Extract
3 Eggs
2 and 1/2 Cups of Flour
1 Tablespoon of Baking Powder
3 Tablespoons of Milk

Icing:
2 Cups of Powdered Sugar
3 Tablespoons of Milk
1/8 to 1/2 Teaspoon of Anise Extract

These are delicious filled with your favorite thick Jam. Try chopped chocolate or nuts. (Oops I said Tablespoons its teaspoons)
3 eggs room temperature
1 1/2 cups granulated sugar
3/4 cup milk
3/4 cup oil your choice
1 teaspoon vanilla
5 teaspoons baking powder
5 cups all-purpose flour
Beat eggs and granulated sugar till light and fluffy.
Add milk and oil continue to beat add vanilla let it beat till it becomes pale yellow in color and forms a ribbon when liquid is dripping.Beat for 3 minutes creamed mixture.
In another bowl place the all-purpose flour and baking powder and stir
Slowly beat in dry ingredients into creamed mixture.
Dust countertop with flour remove cookie dough and knead dough for 5 minutes or less depending add flour when needed. (Not to much)
Just need till it feels like dough you can handle. cut 6 equal logs.
Roll dough to 9x9 square place 3 heaping Tablespoons of your Jam or filling about a 1/3 down the Square you can lightly spread Jam or leave it in the area you dropped the Jam. If you leave the Jam without spreading you will have it in the center of the slice. It's up to you.
Spray pan place cookie roll on the pan (3)) on each cookie pan.
Bake at 350 20-25 minutes Make 6 cookie logs let hot rolls sit on a cooling rack then pour glaze over them sprinkle colored jimmies over tops. Let glaze harder then slice to 1 or your thickness
Topping use powder sugar and milk or water to your thickness.
