Jordan Marsh Blueberry Muffins
This how-to video was filmed by my 12 yr old who also enjoyed eating the fruits of our labor!
Jordan Marsh Blueberry Muffins
1/2 cup softened unsalted butter (1 stick)
1 cup sugar (recipe calls for 1 1/4 but too much in my opinion)
2 eggs
1 teaspoon vanilla extract
2 cups flour
1/2 salt
2 teaspoons baking powder
1/2 cup milk
2 cups blueberries (I use frozen as fresh are very expensive)
3 teaspoons raw sugar (optional)
* can add lemon zest and/or nuts
Preheat oven to 375 °
Cream butter and sugar until light
Add eggs, beat well after each one. add vanilla.
Sift flour, salt, baking powder and add alternating with milk.
Crush 1/2 cup berries and add with the rest folding into batter. If using frozen, add and fold.
Scoop into either lined or greased muffin tin, standard size and sprinkle with raw sugar over the top of the muffins.
Bake 375° for about 30-35 minutes.
Let cool for 5 minutes in tin then remove and set on rack for at least 30 minutes before devouring. Don't forget to freeze some to use for easy weekday breakfasts!

Homemade, Moist Blueberry Muffins recipe from scratch/Jordan Marsh style Blueberry Muffins
These Blueberry Muffins are super soft, moist and delicious made from scratch following the famous Jordan Marsh's recipe.
Ingredients:
Softened butter - 1/4 cup (62 g)
Sugar - 1/2 cup (100 g)
Vanilla flavored sugar - 1 tspn
Egg - 1 no
All purpose flour - 1 cup (125 g)
Baking powder - 1 tspn
Salt - 1/2 tspn
Milk - 1/4 cup (61 ml)
Fresh blueberry - 1 cup (~100 g)
Brown sugar - 1 tbspn
Bake at 190°C for 25 - 30 minutes
This recipe makes 6 muffins :)
Blueberry muffins - Jordan Marsh style with a very tiny twist
- 120g Butter
- 190g Sugar
- 2 Eggs
- 245g Flour
- 5g Baking powder
- 3g Salt
- 116g Whole milk
- 8g Lemon juice
- 2 Whole lemon zest
- 360g Blueberries
Extra demerara sugar for sprinkling on top of the muffins before baking. (Note: The original recipe normally use caster sugar)
I remember when I was making '''Alison Roman's famous chocolate chunk shortbread cookies'', in her recipe which she uses demerara sugar to coat the cookie dough before baking. the demerara sugar gives the cookie another layer of texture and deeper sugar flavour, therefore I took the idea from the shortbread cookie and used demerara sugar on this muffin recipe instead caster sugar of the original recipe.
These muffins are easy to make and taste super nice, hope you would give a try :)

Ingredients:
1/2 Cup Butter (Room Temperature)
2 Cups Flour (Sifted or Unsifted)
1 Cup Sugar
2 Large Eggs
1/2 Cup Milk
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
2 1/2 Cups Blueberries (Fresh Preferred)
1 1/2 Teaspoons Vanilla Extract
2 Tablespoons of sugar to dust the muffin tops
Instructions:
Preheat oven to 375 degrees F
In a large mixing bowl, cream together butter and sugar until fluffy.
Add Eggs, one at a time, beating after each one.
In a separate bowl, combine all dry ingredients thoroughly.
Gradually add the dry ingredients to the creamed butter and sugar, then add in milk and vanilla.
Add in blueberries and mix in by hand.
Grease muffin baking pan and fill the muffin cups.
Sprinkle Sugar on top of unbaked muffins.
Bake at 375 degrees for 25 - 30 minutes.
Cool in the pan.
Use a knife to go around the muffins and pop them out of the muffin cups.
Eat warm with butter, of cool on a wire rack.
Pour yourself a cup of coffee or milk and Enjoy!
