Step 1: Assemble & Bake Pizza
Ingredients
* Proofed dough
* Grated low moisture mozzarella cheese
* Grated white cheddar cheese
* Pizza sauce
* Olive oil
1) Liberally coat sheet tray with olive oil and stretch dough to edges.
2) Cover the dough and let rise at room temp for 2 hours
3) Combine and moz/cheddar cheese and spread to the edges of the pan to create a cheese crust
4) Add the sauce in strips and bake for 15–20 minutes or until golden brown
Equipment
* 450F preheated oven
* ½ sheet tray
Step 2: Pistou & Plate
Ingredients
* Salt
* 1 lg bunch fresh basil
* 1 cup parsley
* 1 Tbsp lemon juice
* 2 cloves garlic
* Castelvetrano olives
* 1/4 cup evo
* Burrata
1) Grind salt, garlic, and green olives until a paste.
2) Add in basil and grind until smooth
3) Stir in olives and then gradually add in the evo
4) Season
5) Plate pistou and fresh burrata on top of cooked pizza

* Mortar and pestle
* Microplane
* Cutting Board
* Plating spoons

RAJAS CON CREMA PIZZA
Step 1: Make the Chile Rellenos and Raja Crema Sauce
Ingredients
For the Rellenos:
* 4 Russet potatoes
* 1 bowl Shredded Monterey jack cheese
* 6 Poblano chiles
* 3 eggs
* ½ c flour
* ½ tsp salt
1) Boil potatoes until soft. Mash and combine with cheese
2) Roast poblanos until blacked and blistered. Put in ziplock to sweat them out for 5 mins. Remove stems, peel, and deseed. Cut a small slit in the middle and stuff with potato/ cheese mixture
3) Separate the egg whites from the yolk. Beat the egg whites until stiff peaks form. While continuing to beat on low, pour in yolks one at a time until fully mixed in. batter should be light and fluffy.
4) Roll peppers in flour then gently dip in egg batter. Drop in fryer for 3-5 mins per side.
For the RAJA sauce:
* 5 roasted poblano peppers
* 1 tbsp butter
* ½ of a white onion, thick slices
* ½ tsp salt
* ½ cup mexican crema
* ½ cup milk
* ½ cup grated oaxaca cheese
1) Cut peppers into long stripes.
2) Cook onions in butter until translucent.
3) Add peppers, crema, and milk. Add cheese. Cook until nice and creamy

* Sheet pan
* Ziplock
* 2 small bowls
* Hand mixer
* 1 large bowl

* Sheet pan w. Rack
* Cutting board
* Knife
* Wooden spoon
* Medium Saucepan
Step 2: Assemble da Pizza
Ingredients
* Pizza dough
* Raja sauce
* Shredded Monterey jack cheese
* Shredded Manchego cheese
* Shredded chihuahua cheese
* Minced Garlic
* Fresh Oregano
* Finished chile rellenos
* Squeeze bottle of mexican crema
* Chopped cilantro
1) Roll out and shape dough
2) Layer pizza dough with raja sauce, 3 cheeses, garlic, oregano.
3) Top with whole chile rellenos, more sauce, crema and cilantro

How To Make a Pizza Dough Zoom Class Video
Our Zoom class this week was all about pizza dough and why we ferment our pizza dough for several days at a time. Our cold fermentation is our preferred method for long ferments on our pizza dough. This class was super fun and we answered a. lot of your amazing questions all things pizza dough.
And we had our Baking Steel fired up so we were able to make a pizza using our 72 hour fermented dough toward the end of class. So fun and thank you guys.....

72 Hour Pizza Dough Recipe (makes 4 - 12” Pies)
Scale recipe up or down using the percentages
Ingredients
500 grams (3 3/4 cups) organic bread flour (100%)
16 grams (2 tsp) fine sea salt (3%)
1 gram (1/4 tsp) active dry yeast (.02%)
350 grams or (1 1/2 cups ) of water (70%)
Directions
In a large bowl, whisk together the bread flour, salt, and yeast.
Slowly add the water, and mix with a wooden spoon just to combine. Once the mixture is moistened, lightly flour a countertop or large cutting board and remove the dough from the bowl with lightly oiled or wet hands (to discourage sticking). Knead for 2-3 minutes to remove clumps. The dough won't become elastic, but should easily form a loose ball.
Place the dough in a bowl and cover with an air tight lid or plastic wrap.
Place dough container in refrigerator for up to 7 days. Remove portions as needed and goto next step.
Lightly flour a large cutting board or your kitchen countertop, and place the dough on it. Wet or lightly oil your hands again.
Make your dough balls.
Place the dough balls on a sheet tray and lightly flour and cover. Let proof for 4-6 hours to allow the glutens to relax.
Turn on your oven about 1 hour prior to pizza making with your Baking Steel or pizza stone on the top rack, preheat at 500 F.
Make your pizza.
