2 tbsp thick yoghurt
1/2 tsp salt
1/2 tsp turmeric powder
For the sauce
3-4 tbsp vegetable/coconut oil

OLD DELHI style CHICKEN KORMA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Paste
Oil for frying, तेल तलने के लिए
4 medium Onions, sliced, प्याज
8-9 Cashew Nuts, काजू
For Curd Mixture
2 cups Curd, beaten, दही
1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ tbsp Coriander powder, धनिया पाउडर
1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
For Delhi Style Chicken Korma
3-4 tbsp Fried onion oil, तला हुआ प्याज का तेल
3-4 Cloves, लौंग
3-4 Green cardamom, हरी इलायची
Prepared Curd MIxture, तयार किया हुआ दही का मिश्रण
Salt to taste, नमक स्वादअनुसार
1 kg Chicken (thigh & drumstick) चिकन
1 heaped tbsp Prepared Onion-Cashew Paste, तैयार किया प्याज-काजू का पेस्ट
1 tsp Kewra water, केवड़ा
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Paste
In a kadai, add oil, once it's hot, add onions and fry until it's light golden in color.
Transfer it to a absorben paper and keep aside for further use.
In the same oil, add cashewnut and fry until light golden in color.
Transfer the mixture into the grinder jar and make a smooth paste of it.
Keep aside for further use.
For Curd Mixture
In a bowl, add curd, ginger garlic paste, coriander powder, degi red chili powder, turmeric powder and mix it well.
Keep aside for further use.
For Delhi Style Chicken Korma
In a handi, add fried onion oil, once it's hot, add cloves, green cardamom and let it splutter.
Add prepared curd mixture and saute it for 4-5 minutes on low flame.
Add chicken and cook it for a while until tender. Add kewra water and mix it well.
Finish it with coriander leaves and transfer it to a serving dish.
Garnish it with coriander sprig and serve hot with roti.

Chicken Degi korma
serves 6-8
Recipe in English:
Ingredients:
-Oil ¾ Cup
-Pyaz (Onion) sliced 1 large
-Chicken qorma cut ½ kg
-Dahi (Yogurt) whisked ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Javatri powder (Mace powder) ¼ tsp
-Dhania powder (Coriander powder) 1 & ½ tbs
-Namak (Salt) 1 tsp or to taste
-Jaifil powder (Nutmeg powder) ¼ tsp
-Garam masala powder ½ tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Laung (Cloves) 5
-Hari elaichi (Green cardamom) 5
-Sabut kali mirch (Black peppercorns) 13-14
-Darchini (Cinnamon sticks) 2-3
-Badi elaichi (Black cardamom) 1
-Tez paat (Bay leaves) 2
-Pani (Water) ½ Cup or as required
-Kewra water 1 tbs
-Garam masala powder ¼ tsp
Directions:
-In pot,add oil,onion and fry until golden brown (don’t leave unattendant).
-Take out fried onion and spread on a tissue paper and let them cool.
-In blender,add fried onion and grind well & set aside.
-Leave half cup of oil in the pot (remove excess oil),add chicken,yogurt,ginger garlic paste,mace powder, coriander powder,salt,nutmeg powder,garam masala powder,red chili powder,cloves,green cardamom, black peppercorns,cinnamon sticks,black cardamom,bay leaves and mix well.
-Turn on the flame and cook on medium low flame for 6-8 minutes.
-Cover and cook on low flame for 5 minutes.
-Add fried & crushed onion,mix well and cook on medium low flame until oil separates.
-Add water,kewra water and mix well.
-Add garam masala powder,cover and cook on low flame for 5-6 minutes & serve!

-Pyaz ko nikal lein aur tissue paper per dal ker pheela lein aur thanda ker lein.
-Blender mein fried pyaz dal ker ache tarhan grind ker lein & side per rakh dein.
-Pot mein half cup oil chor dein aur execss oil nikal lein,chicken,dahi,adrak lehsan paste,javatri powder, dhania powder,namak,jaifil powder,garam masala powder,lal mirch powder,laung,hari elaichi,sabut kali mirch,darchini,badi elaichi aur tez paat dal ker ache tarhan mix ker lein.
-Chulha on karein aur halki darmiyani ancch per 6-8 minutes kliya paka lein.
-Dhak dein aur halki ancch per 5 miutes kliya paka lein.
-Fried & crushed pyaz dal ker ache tarhan mix karein aur halki darmiyani ancch per oil alag hunay tak paka lein.
-Pani aur kewra water dal ker ache tarhan mix ker lein.
-Garam masala powder dal ker dhak dein aur halki ancch per 5-6 minutes kliya paka lein & serve karein.

Ingredients:
-Ghee ¾ Cup
-Pyaz (Onion) sliced 2 large
-Badi elaichi (Black cardamom) 2
-Hari elaichi (Green cardamom) 5-6
-Laung (Cloves) 3-4
-Kali mirch (Black pepper corns) ½ tsp
-Baadiyan ka phool (Star anise) 1
-Darchini (Cinnamon sticks) 2-3
-Kala zeera (Black cumin seeds) 1 tsp
-Tez paat (Bay leaves) 3
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Chicken (Qorma cut) ½ kg
-Namak (Salt) 1 tsp or to taste
-Paprika powder 1 tsp
-Dhania powder (Coriander powder) roasted 2 tbs
-Lal mirch powder (Red chili powder) 2 tsp
-Zarda ka rang (Yellow food color) ¼ tsp
-Pani (Water) ½ Cup or as required
-Dahi (Yogurt) sour 1 Cup
-Jaifil powder (Nutmeg powder) ¼ tsp
-Javatri powder (Mace powder) ¼ tsp
-Garam masala powder ¼ tsp
-Makhan (Butter) ½ tsp
-Kewra water 1 tsp
-Badam (Almonds) blanched for garnishing
-Adrak (Ginger) for garnishing
Directions:
-In pot,add ghee and let it melt,add onion and fry until golden brown & set aside.
-In the same pot,add black cardamom,green cardamom,cloves,black pepper corns,star anise,cinnamon sticks,black cumin seeds,bay leaves and fry for 1 minute.
-Add ginger garlic paste and mix well.
-Add chicken and fry until chicken changes color,cover and cook for 4-5 minutes.
-Add salt,paprika powder,coriander powder,red chili powder,yellow food color and mix well for 2 minutes.
-Add water and mix well.
-Turn off the flame,add yogurt and mix well for 2 minutes.
-Turn on flame,add nutmeg powder,mace powder,mix well and cook for 2-3 minutes.
-Add fried & crushed onion and mix well,bring it to boil,cover and cook for 2-3 minutes.
-Now cook on high flame for 2-3 minutes.
-Add garam masala powder,butter,kewra water and mix well.
-Garnish with almonds and ginger.
Tip: For crispy onion evenly spread on paper towel to remove excess oil & Let it completely cooled.

-Pani shamil ker ka mix ker lein.
-Chulha bund ker dein,dahi shamil karein aur 2 minutes kliya ache tarhan mix ker lein.
-Chulha on karein,jaifil powder aur javatri powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
