These Mint Chocolate Twix Bars are gluten free, dairy free, refined-sugar free, and packed with stress-reducing herbs!
The peppermint, cacao, and coconut cream in Chill the F* Out™ not only make this recipe taste delicious, but also provide mood-boosting benefits. Additionally, the reishi and ashwagandha in this herbalist-formulated blend work behind the scenes to help calm the mind and support the body’s natural inflammatory response.
Shortbread layer:
- 1.5 cups almond flour
- 3 tbsp melted coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
Caramel layer:
-2/3 cup creamy peanut butter
-1/3 cup maple syrup
-3 tbsp coconut oil
-1 tsp vanilla extract
-1/4 tsp salt
Chocolate layer:
- 2 tsp Chill the F* Out™
- 3/4 bar of chocolate
- 1 tbsp coconut oil
To make:
1. Mix the shortbread ingredients in a medium bowl and add to a loaf pan.
2. Bake for 10 min at 350° and allow to cool for 10 min.
3. Heat the caramel layer ingredients in a sauce pan over medium-low heat for 2 min and stir frequently.
4. Pour over cooled shortbread layer and place in freezer for 20 min.
5. Heat the chocolate and coconut oil, and then stir in Chill the F* Out™.
6. Pour the chocolate over the hardened caramel layer and tilt the pan to evenly coat with chocolate.
7. Place in the fridge for 30 min before cutting into bars or squares!

이 번에는 민초입니다!!!
고백 하건대 저는 민초를 좋아하지 않아요 ㅜㅜ.
왜 초코에 민트를 넣는 건가... 늘 궁금했어요.
얼마 전 BTS 라방을 봤는데.. RM이 왜 초콜릿에 치약을 넣느냐고 말하더군요. 저는 그 말에 정말 공감했어요.
그런데 저의 남편은 민초를 좋아해서 저한테 오래~ 전부터 민트 초코 케이크를 만들어 달라고 했었어요.
저는 강렬히 저항하고 철저히 무시했어요. 민트 초코케이크를 만들려고 몇 방울의 민트 에센스를 위해 한 병을 사기도 아깝고 이래저래 이유를 대었지요.
그런데~, 결국 만들었답니다. 정말 제가 잘 한 일 가운데 하나라고 생각해요. ㅋㅋㅋ
어느 날 마트를 돌다가 갑자기 눈에 따~악 띈 박하사탕!
박하사탕 성분을 보니 설탕과 물엿과 민트 오일이 들어있었어요.
이 사탕을 갈아 넣어서 제누아즈를 만들고 생크림을 만들자는 생각이 들었죠.
지난주 내내 테스트 테스트... 와~ 정말 맛있었어요.
민트 맛은 강하지 않아요.은은하게 프레시하고 콧속?에서 민트 향이 솔~솔~ 풍기는...
그러고 나서 여러 지인들에게 시식을 하게 했어요. 다들 넘넘 좋아했어요. 안 달고 상쾌하고 향이 좋다고요.
저는 박하사탕에게 감사합니다. 민초 싫어하는 저도 정말 맛있게 느꼈어요.
시중의 두 가지 제품을 테스트해 봤는데요, 두 제품의 맛은 약간 달랐지만, 결과는 다 좋았어요.
저처럼 민초를 사랑하지 못했던 분들도 정말 좋아하실 거예요. 강추 합니다.

This time, I made Mint Chocolate Cake!!!
But truly, I don't like Mint Chocolate.
Why do they put mint in chocolate... I've always wondered.
I saw BTS V Live a while ago, and RM also said that why do they put toothpaste in chocolate?. I really agree with him.
But also my husband liked mint chocolate so He had kept asking me to make a mint chocolate cake.
I resisted intensely and ignored it thoroughly.
I convinced him saying that it was a waste to buy a whole bottle for a few drops of mint essence.
Nevertheless, I ended up making Mint Chocolate Cake.
I have to confess that it's one of the best things I have ever done. Hahaha...
One day, I was looking around the mart, suddenly the Peppermint candy caught my eyes!
The ingredients of mint candy are sugar, starch syrup, and mint essence.
I got an idea to make a sponge cake and whipped cream with this candy.
Tested… tested… all week... Wow~ It was really delicious.
The mint taste is not strong. It is softly fresh and has a mint scent from the inside of the nose...
My family, sister, and a friend tasted it. Everyone loved it. It releases a nice, mild, and fresh mint flavor. But not too sweet.
I am grateful to mint candy. Even I, who hates Mint Chocolate, really enjoyed it.
I tested two mint candy products. They tasted slightly different, but the results were all good.
Even those who didn't love 'Mint Chocolate' like me would really enjoy this cake. I recommend you this recipe.

Ingredients (15cm / 6inch size cake)
♥︎ Chocolate sponge cake (15x7 cm in diameter)
2 eggs (104g)
90g powdered mint candy
1 egg white (36g) + 30g sugar
55g cake flour + 11g cocoa powder (Valrhona)
30g heavy cream
♥︎Cream for filling & Icing
300g heavy cream
38g powdered mint candy
Mint-colored food coloring (Deco Relief)
20g ground Oreo cookies
6 pieces of Oreo cookies cream removed
♥︎ Mint candy syrup
50g water
25g powdered mint candy
*Bring to boil all ingredients and let cool before use.
♥︎ Chocolate ganache drip
30g heavy cream
33g dark chocolate (Callebout 57.9%)
♥︎ Whipped cream for piping
100g heavy cream
12g powdered mint candy
Mint-colored food coloring (Deco Relief)
1M piping tip (Wilton)
♥︎ Decorations
Star sprinkles.
White sugar pearl (Wilton).
Six half-cut Oreo cookies.
Mint Chocolate Fudge
This mint chocolate fudge is the perfect homemade sweet treat! A simple and quick candy that is made from scratch with a handful of ingredients: white chocolate chips melted with green food coloring then combined with sweetened condensed milk, milk chocolate chips, and mint extract, before being layered and swirled. The result is a rich, creamy fudge that melts in your mouth.

INGREDIENTS
2 cups white chocolate chips
14 ounce can sweetened condensed milk
1 cup milk chocolate chips
1 teaspoon mint extract (add ½ teaspoon more if you like more mint flavor)
Green food coloring
INSTRUCTIONS
Line an 8x8 pan with foil and spray with nonstick spray. Set aside.
In a medium saucepan over low heat melt the white chocolate chips with the sweetened condensed milk until smooth and creamy.
Remove from heat and stir in the mint extract and add the green food coloring to the desired tint of green. Leave in the pan to keep warm and pourable.
In a medium-size saucepan over LOW heat melt the milk chocolate chips.
Pour the green mint fudge into the bottom of the prepared pan but hold back about ¾ cup (just leave it in the pan).
Drizzle the chocolate mixture onto the mint mixture in the prepared pan in a random pattern. Using a knife or wooden skewer make a swirl pattern in the fudge.
Drizzle the remaining green fudge on top of the swirled fudge and swirl again!
Refrigerate uncovered for 3-4 hours until set.
Remove the fudge from the pan and peel the foil back. Cut into squares to serve!

With a layer of bittersweet chocolate and a layer of white chocolate, this peppermint bark is so perfect for the holidays. When topped with crushed peppermint and cut into squares, these are also a terrific gift!

INGREDIENTS
- 24 oz bittersweet chocolate
- 24 oz white chocolate
- 1 cup crushed peppermint
- 3/4 tsp peppermint extract
INSTRUCTIONS
- Place peppermint candy in a large plastic bag and crush into small pieces with a meat pounder. Set aside.
- Line a 9x13 baking sheet with parchment paper and set it aside.
- Heat 4 cups of water in a 4-quart saucepan over medium-low heat. Set a large glass bowl on the saucepan so the bottom does not touch the barely simmering water. Add the bittersweet chocolate to the glass bowl. Stir and slowly allow the chocolate to melt. Once all of the chocolate is melted and smooth, pour onto the prepared baking sheet. Smooth to an even layer and sprinkle with ¼ cup of crushed peppermint candy.
- Wash and dry the bowl and set over the barely simmering water. Add the white chocolate. Stir until the chocolate is smooth, then remove from the heat. Add the peppermint extract, stir, and pour over the bittersweet chocolate. Smooth to an even layer and top with remaining peppermint candy pieces.
- Allow to cool at room temperature until hardened, 2-3 hours. Once the bark is hard, cut or break into pieces. Store in an airtight container for up to two weeks.
