EASY CHEATER ENCHILADAS!! QUICK WEEKNIGHT MEAL IDEA!!
Today I have a fantastic cheater meal for you. This one gets on the table in just about a half an hour and boy is it a delicious people pleaser! These cheater enchiladas could not be any easier! Frozen taquitos make this super fast and sort of cheater. These bake up so good! Pair with your favorite side for one delicious and quick weeknight meal for those crazy busy days that never seem to end!
We used some beef and cheese and some chicken and cheese taquitos. I used some canned red enchilada sauce on the beef taquitos and some canned green enchilada sauce on the chicken taquitos. Topped the red sauce with a Mexican blend cheese and the green sauce with some shredded mozzarella. If you have access to queso blanco then use that but in a pinch the mozz is boss.
These bake up in about 20 to 25 minutes in a 350 degree oven. I paired mine with a guacamole salad like you sometimes get on a combination plate at your favorite Mexican restaurant. I used some bagged shredded lettuce and some deli guacamole topped with some diced garden tomatoes. I added a dollop of sour cream to the enchiladas when serving but you could also sprinkle on some cotija cheese or green onions or all of the above! You make these however you and yours will love them!
NOTE: this concept is also wonderful using good quality frozen burritos or chimichangas. Those might take a bit more sauce but they do come out as a delicious smothered burrito or chimichanga. I promise they won't disappoint!
No shame in using some quality convenince items from time to time and this is one of those times that it feels good to put a delicious hot meal on the table instead of spending big bucks on take out!

Lazy Man's Enchiladas
This recipe will have extra. you might need an additional baking dish. Cut recipe in half if there is just 4 people in your family.
ingredients:
1.5 lbs ground beef
2 large 28oz cans of Enchilada Sauce green or red
1 large 24 oz. jar of your favorite salsa
1 can sliced olives
16 oz. sour cream
1 onion diced
2 lbs. Mexican blend cheese (yellow and white mixed) shredded
1 lb. Mexican blend or Taco cheese shredded
2 bags of tortilla chips
Directions:
Brown ground beef with diced onions
smash up tortilla chips and pour into a very large mixing bowl or big pot
Pour in Salsa, Enchilada Sauce, 2 lbs bag of cheese, meat and onions and mix well
put into casserole dish. Bake at 350 for one hour
top off servings with sour cream and olive slices

LAZY DAY ENCHILADAS! ENCHILADA BAKE! ENCHILADA CASSEROLE!
Hey everyone, thanks for stopping by, today we're making some easy Enchiladas! I have a longer version linked here
Ingredients
35-40 corn tortillas
3 pounds of meat, I used beef
1 large sweet onion, chopped roughly
6 cloves of garlic
1 chipotle pepper, chopped very fine
1 can tomato paste
4 cups of beef stock, or match the meat you use
1-2 pounds of cheese, grated
1/2 can of black olives
2 tablespoons corn starch
1 teaspoon brown sugar, forgot to show
Seasoning blend
2 tablespoons smoked paprika
2 tablespoons chili powder
2 tablespoons salt
1 tablespoons cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1 tablespoon oregano
1/2 tablespoon cayenne pepper
Directions
Stir the corn starch and a little of the beef stock together and set aside. Cook the meat with onion, chipotle and garlic then add 1-2 tablespoons blend per pound of the meat you're using. Remove most of the fat, leaving 1/4 cup in the pan, and around 1/8 cup in the meat, setting the meat aside. Fry the tomato paste in the fat for around 2 mins, stirring consistently. Now add some of the blend, I used 3 tablespoons, and toast for around 30 secs. Now add some of the beef broth to the pan and stir until smooth, then add the rest of the beef broth and stir until its well blended together. Once it comes to a boil add the cornstarch mixture, and stir until it thickens, taste for seasoning, then its done.
Time to assemble, oil a pan large enough so that everything can fit. Dip the tortillas in the sauce, both sides, then lay them in the pan. Then the meat, then the cheese, then repeat until you use all of the mixtures. Making the layers thin. I like to end mine with sauce, then cheese, then olives. Bake in a 375 degree oven for 25-30 mins or until bubbling and cheese is melted. Let set for 15-30 mins, then slice and serve!
Top with sour cream, cheese, onion, or anything else you like on your Mexican food.
