Ingredients:
For the enchiladas
Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

EASY enchiladas recipe with frozen taquitos aka LAZY enchiladas
To make easy enchiladas recipe with frozen taquitos, you only need 4 ingredients. This dish is sometimes called lazy enchiladas because they taste like enchiladas, but they are made from frozen taquitos.
I like using frozen taquitos because you don't have to spend time stuffing and rolling corn tortillas that like to tear.
Ingredients:
2 cans refried beans, 16 oz can size
1 package frozen taquitos chicken, beef, or vegetarian, approximately 1 lb 5 oz (15-20 taquitos)
1 can mild enchilada sauce 28 ounces
2 cups shredded cheese Mexican blend or cheddar
Optional Ingredients:
Sour cream
Chopped cilantro
Diced tomatoes
Avocado
green onions
Black olives
Instructions:
Preheat your oven to 375°F (190°C) and spray your casserole dish with cooking spray to prevent sticking.
Spread the refried beans on the bottom of the baking dish in an even layer. Pour half of the enchilada sauce on top of the beans layer.
Arrange a layer of taquitos on top of the sauce. The number of taquitos will depend on the brand, but typically it will be around 15-20 taquitos.
Pour the remaining enchilada sauce over the taquitos, ensuring they are evenly coated.
Sprinkle the shredded cheese generously over the top of the casserole, covering it entirely.
Cover the casserole with foil to keep the cheese from burning.
Place the casserole dish in the preheated oven and bake for 35 minutes.
After 35 minutes, carefully remove the foil. Return the casserole to the oven and bake for an additional 5 minutes or until the cheese turns bubbly and slightly golden.
Once the cheese is perfectly melted and the casserole is cooked to perfection, remove it from the oven and let it cool for a few minutes.

⭐️ HOMEMADE ENCHILADA SAUCE 2 WAYS
INGREDIENTS
1 lb lean ground meat of choice
2 tsp light chili powder
1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder
EASY CHEATER ENCHILADAS!! QUICK WEEKNIGHT MEAL IDEA!!
Today I have a fantastic cheater meal for you. This one gets on the table in just about a half an hour and boy is it a delicious people pleaser! These cheater enchiladas could not be any easier! Frozen taquitos make this super fast and sort of cheater. These bake up so good! Pair with your favorite side for one delicious and quick weeknight meal for those crazy busy days that never seem to end!
We used some beef and cheese and some chicken and cheese taquitos. I used some canned red enchilada sauce on the beef taquitos and some canned green enchilada sauce on the chicken taquitos. Topped the red sauce with a Mexican blend cheese and the green sauce with some shredded mozzarella. If you have access to queso blanco then use that but in a pinch the mozz is boss.
These bake up in about 20 to 25 minutes in a 350 degree oven. I paired mine with a guacamole salad like you sometimes get on a combination plate at your favorite Mexican restaurant. I used some bagged shredded lettuce and some deli guacamole topped with some diced garden tomatoes. I added a dollop of sour cream to the enchiladas when serving but you could also sprinkle on some cotija cheese or green onions or all of the above! You make these however you and yours will love them!
NOTE: this concept is also wonderful using good quality frozen burritos or chimichangas. Those might take a bit more sauce but they do come out as a delicious smothered burrito or chimichanga. I promise they won't disappoint!
No shame in using some quality convenince items from time to time and this is one of those times that it feels good to put a delicious hot meal on the table instead of spending big bucks on take out!
