Lemon Dill Chicken recipe — with homemade tzatziki sauce and Moroccan couscous
Lemon Dill Chicken is going into the regular rotation ???? not only is it something I got ZERO complaints about, but it’s so easy to make, and you can add basically any vegetables to it.
I made it the first time a couple weeks ago because I didn’t have the ingredients for what I was planning and wanted to just use up the veggies I had on hand. We’re trying to eat a lot of vegetables right now, and sometimes it gets old. Like, think Mediterranean diet, but without the label. Or the actually sticking to it that “diet” implies. We definitely have not defined that relationship…but I digress.
DINNER. Gotta happen, every day, more or less. I’m not in a recipe-following phase right now, but if that’s you, I still got you covered. And if it’s not, just go with it. I believe in you.
Recipe — serves 6ish people
Chicken:
2.5 lbs boneless, skinless chicken thighs
1/2 tsp salt (divided)
1/2 tsp pepper (divided)
1 tsp dill (divided)
3-4 cloves garlic, minced, crushed, squished, chopped…
Some olive oil (I won’t presume to tell you how much oil your pan needs, because I don’t know your pans)
1 Tbl lemon juice
Season the chicken with half the salt, pepper, and dill on each side (half on each side, so you do use it all here), and schmear all the garlic on one side. Oil that pan up good and cook on medium ish to medium-high heat for 5-7 minutes on each side (non-garlic side first), or until it reaches an internal temperature of 160 degrees Fahrenheit. Drizzle 1 Tbl lemon juice after you flip them over the first time. If you’re fancy (or if you have to help a child on the potty before you can dish up dinner) let it rest for 10 minutes. Voila. Protein done.
Serve over couscous with any combination of tzatziki sauce, feta, chopped dates, and fresh or roasted veggies. My favorite fresh vegetables are cucumber, tomatoes, and red onion ????
Tzatziki sauce
1 1/2 cups plain, thick yogurt (I use either a Greek yogurt or the Nancy’s whole yogurt, because it’s thick like that)
1/2 cucumber, grated and squeezed
3-4 cloves garlic, minced, crushed, squished, chopped…
1/2 Tbl (that’s 1 1/2 tsp) Dried dill
1/2 tsp salt
1 tsp lemon juice
