Not too tart, not too sweet; just right! This lemon meringue pie is as tasty as it is easy to make - so stop using the mix in the box, and try it from scratch.
Ingredients
Filling:
1¼ cups (300 mL / 260g) granulated sugar
6 Tbsp (75 mL / 66g) cornstarch
½ tsp (2 mL) salt
2 cups (500 mL) water
4 egg yolks, beaten
1 Tbsp (15 mL) lemon zest
½ cup (125 mL) lemon juice 3-5 lemons
3 Tbsp (45 mL / 43g) butter
Blind baked 9 deep dish pie shell
Meringue:
5 egg whites, at room temperature
¼ tsp (1 mL) cream of tartar
⅓ cup (75 mL / 45g) instant dissolving (fruit) sugar
Method:
Pre heat oven to 400ºF (200ºC)
Zest one lemon, and then juice all of the lemons to reach 1/2 cup of juice. Separate the eggs.
In saucepan, mix cornstarch, sugar, salt, and water.
Bring to boil over medium-high heat, stirring constantly.
Reduce heat to medium-low and simmer for 3 minutes, still stirring. Remove from heat and whisk one-quarter into egg yolks, then whisk back into pan.
Cook over medium heat, still stirring for another 2 minutes.
Remove from heat and stir in lemon rind, lemon juice and butter. Set aside.
Meringue:
In bowl, beat egg whites with cream or tartar until soft peaks form. Beat in sugar slowly until stiff peaks form.
Pour filling into cooled crust.
Starting at edge spread meringue around outside of still hot filling. Sealing meringue to the crust, which prevents it from shrinking and pulling away.
Spread over remaining filling making peaks.
Bake for 5 to 6 minutes until meringue peaks are golden.
Let cool on a rack for as long as you can stand it.

for the filling-
200g sugar
50g cornflour
250ml water
4 egg yolks
125ml lemon juice
50g butter
for the meringue-
4 egg whites
105g sugar
1 tbsp cornflour
1 tsp water
1 tsp white vinegar – or ½ tsp cream of tartare

CLASSIC LEMON MERINGUE PIE: Easy and Delicious Recipe
When life gives you lemons, try making this Classic Lemon Meringue Pie. It's the perfect balance of tart and sweet, and the crust is tender and flaky. Read on for the recipe:
Lemon Meringue Pie
1/4 cup corn starch
1 cup sugar
1 1/2 cups cold water
3 eggs at room temperature, separate yolks from whites
the zest of 1 lemon, plus 1/4 cup freshly squeezed lemon juice
1 Tbsp. butter
1 9-inch baked pie crust (separate recipe further below)
For the meringue:
3 egg whites
1/3 cup sugar
Preheat oven to 350º
In a medium to large saucepan over medium high heat, combine corn starch, sugar and cold water and whisk until ingredients are dissolved. Add in the egg yolks and continue stirring until it comes to a boil. Once it reaches a boil, reduce the heat and let it simmer for one minute longer, stirring continually as it thickens. Remove from burner and immediately add the lemon zest, the lemon juice, and the butter. Whisk together until smooth and immediately pour into baked pie shell. Smooth out the top with a spatula and set aside while you make the meringue.
For the meringue, place three egg whites in mixing bowl and beat with electric hand mixer until it becomes frothy. Then slowly begin adding the sugar a little at a time and continue to beat until you have stiff peaks. This should take about 5 minutes. Take the meringue and gently pour it on top of your pie filling. Use a spatula to spread it all the way to the edge of the pie shell. When entire surface of the pie is covered in meringue, use the spatula to create swirls and peaks.
Bake for 20 minutes. Remove from oven and let cool completely before serving.

Lemon meringue pie is so much fun to bake! This recipe requires only a few ingredients. I use a store-bought pie crust to keep it quick and easy. The buttery pie shell is filled with a creamy and smooth custard topped with a cloudy meringue top that is so sweet and delicate. This is a must-have dessert at any spring get-together. Your guests will absolutely love it!

2:28 - Slowly pour in sugar.
2:33 - Add in pure vanilla extract.
2:35 - Continue to whisk until stiff.
2:37 - Remove the plastic wrap from the pie.
2:43 - Add the meringue to the top of the pie.
2:48 - Smooth out the meringue.
2:59 - Pat the top.
3:03 - Bake the pie.
3:10 - Let the pie cool.
3:15 - Slice the pie and serve.
