How To make Lemon Poppyseed Cake In a Jar
2 2/3 cups sugar
2/3 cup shortening
4 eggs
1/2 cup fresh lemon juice
1/4 cup water
3 tablespoons grated lemon rind
1 teaspoon lemon extract
1/2 cup poppy seeds
3 1/2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
7 one pint wide mouthed canning jars -- sterilized
I a large bowl, cream sugar and shortening with an electric mixer. Add eggs and mix well. Add lemon juice, water, lemon peel, extract and poppy seeds. Place dry ingredients in a seperate large bowl and blend with a whisk. Add creamed ingredients to dry ingredients, and mix with a spoon. Place 1 cup of batter in 7 sterilized, well-greased, one pint wide-mouthed canning jars. Wipe batter from rim. Place on a baking sheet in 325 degree oven, and bake for 55 minutes or until a toothpick inserted in center comes out clean. Wipe rims, and seal with sterilized seals and rings.

1 - 3/4 cups (263 grams ) all-purpose flour
1 cup (200 grams ) white granulated sugar
1/2 cup (114 grams ) salted butter, softened
2 large lemons, zest finely grated
3 large eggs
1/4 cup (63 grams) milk
1 Tablespoon ( 10 grams ) poppy seeds
2 teaspoons ( 10 grams ) baking powder
1/2 cup (125 grams ) lemon juice
** BAKE for 55 minutes at 350 degrees F / 177 degrees C

LEMON & POPPY SEED AVOCADO CAKE : Let’s go crazy with an avocado, lemon, flour.. And poppy seeds..
Welcome to my channel for Easy n' tasty foods.
I bring you easy recipes for small homes with just 2 people.. recipes that taste great but do not involve too much work and can be put together in minutes.
Today we go a bit crazy with an avocado, mixed flours, poppy seed and lemon and make this gorgeous Lemon & Poppy Seed Avocado cake
I thought that the creaminess of the avocado would allow us to use no butter and less oil.. and yup, it worked.
Remember not to open the oven for first 25 minutes - else your cake will flop when you finally take it out of the oven.. mine did.. but it tasted great anyway.

¼ cup wholemeal flour (or atta)
¼ cup plain flour (or maida)
¼ cup almond meal flour
¼ cup desiccated coconut
½ cup sugar
⅛ tsp or a big Pinch of salt
½ tsp baking powder
¼ tsp baking soda
½ tsp all spice powder
1 ½ tbsp poppy seeds
⅛ cup oil
2 tbsp thick yoghurt
Medium mashed avocado (about ½ cup)
1 heaped tsp of grated lemon rind
2 tbsp lemon juice
Note : If you do not have almond meal, you could dry roast almonds after taking skin off and grind to a powder. OR you could just use ½ cup plain flour and leave the almond meal out altogether.
Our three star ingredients.. Avocado, lemon and poppy seeds ..
Then we have three flours - ¼ cup each of whole meal flour, plain flour and almond meal flour
We also have ¼ cup of desiccated coconut,
Then ½ cup sugar, a pinch of salt, ½ tsp baking powder, ¼ tsp of baking soda ; ½ tsp all spice powder
Thick yoghurt, and regular cooking oil
LEMON CREAM CHEESE FROSTING
50 gms cream cheese
⅛ cup powdered sugar (or 1 heaped tbsp)
1 tbsp lemon juice
¼ tsp lemon zest
¼ tsp vanilla extract
Poppy seeds
Preheat oven to 180C. Line a 9” baking dish with parchment or baking paper
Mix all the dry ingredients together -so that’s ¼ cup each of whole meal and plain flour, ¼ cup almond flour and then add ¼ cup desiccated coconut and mix well.
Add in the ½ tsp baking powder, ¼ tsp baking soda, ½ cup sugar, ⅛ tsp salt, ½ tsp all spice powder and 1 ½ tbsp poppy seeds. Stir well to aerate the dry ingredients
In another bowl, add in the ½ cup mashed avocado, 2 tbsp yoghurt, 1 tsp lemon rind and 2 tbsp lemon juice and stir well to blend. Then add in the oil and mix till it’s all comes together
Fold the dry ingredients a little bit at a time into the wet ingredients
Place the cake dough into the prepared baking tin.. Try to flatten the top bit with the spoon and then whack the tin gently to remove any air bubbles
Bake at 180C for about 30 mins or till the top is light brown. Then cover the top with a sheet of baking paper and bake for a final 15 mins till done.
Turn your oven off but leave your cake covered in the oven for 5 mins.
Cool completely before adding the lemon cream icing
FOR THE CREAM CHEESE FROSTING
Allow the cheese to come to room temperature and then cream it till its soft and smooth
Add in the sugar and continue mixing till you have a smooth paste
Mix in the 1 tbsp lemon juice, and finally add in the vanilla extract, poppy seeds and lemon zest.
Continue mixing for a few minutes till you get a smooth lemon cheese frosting.
Wait don’t eat that yet, yummy as it is. Wait for the cake to cook and add this on.. It is totally worth the wait

Poppyseed Crumble Cake is a must-try! It is impossible to describe this cake just believe me that it is so good that every bakery has it on display daily because everyone loves it. The black color of the cake might be a little odd - but I think it looks a little like caviar - this shouldn't keep you from trying this recipe. It is one of my family's favorite cakes.
