Fettuccine Alfredo

Ingredients
18 ounces fresh fettuccine
2 1/2 cups heavy cream
1/2 cup fresh lemon juice
12 tablespoons unsalted butter
2 cups grated Parmesan
2 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground white pepper
Directions
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

Treat yourself tonight! Indulge in this lightened version of the rich Italian pasta dish.
When you're short on time and the ingredient list is short, make every ingredient the freshest and best you can find. A real wood-smoked bacon imparts lots of flavor: Applewood is mild and slightly sweet, while hardwood, such as hickory, is more assertive.

1. Cook pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 1/4 cup cooking liquid.
2. While pasta cooks, cook bacon in a large nonstick skillet over medium-high heat 4 minutes or until crisp, stirring occasionally. Remove bacon from pan, reserving drippings. Add garlic to drippings in pan; sauté 1 minute, stirring constantly. Sprinkle flour over garlic; cook 30 seconds, stirring constantly. Gradually add milk, stirring constantly; cook 2 minutes or until bubbly and slightly thick, stirring constantly. Reduce heat to low. Gradually add cheese, stirring until cheese melts. Stir in salt and reserved 1/4 cup cooking liquid. Add hot pasta to pan; toss well to combine. Sprinkle with bacon, parsley, and pepper.

I just named it “alfredo” because that is the name of the sauce i use. The sauce is not from scratch. If you want an alfredo recipe with homemade sauce, please check out the updated version of this video referenced above. ^^^^
*** Ingredients Used***
- Pasta of choice
- 1 lbs chicken
- Salt to taste
- Paprika to taste
- 1 medium onion
- 4 medium garlic cloves
- black pepper to taste
- 12 oz jarred classic alfredo sauce (from my local grocery store)
-1 tsp basil
- Chicken boullion seasoning to taste
*Cater seasoning preferences to your desired taste. If you feel like something needs more or less, Change it! ;)

ALFREDO sauce is super easy to make (and quick)!
NEVER BUY JAR SAUCE AGAIN! This recipe is so easy and FAST:
1/2C (1stick) butter
1C heavy cream
1C fresh grated parm
Minced garlic
Black pepper
Sauté mixed garlic in melted butter over low heat 1-2 minutes. Whisk in heavy cream and black pepper to taste and heat over low. Stir in parm until melted (keep heat low, and stay with it! This scalds easily!) Toss with pasta cooked to al dente and serve with desired proteins and veggies. ????

High Protein Three Ingredient Alfredo
This will blow away any high protein or “light” Alfredo you’ve ever had. Actually… it may blow away any Alfredo you’ve ever had in general. The crazy thing is - without any chicken or meat whatsoever - this clocks in at 36g of protein per serving. Just for the pasta + Alfredo sauce!

Ingredients
320g Protein penne (or pasta of choice, majority of protein comes from the sauce)
12oz evaporated fat free or 2% milk
350g 2% cottage cheese
100g Parmigiano Reggiano
Optional/to taste: salt, pepper, garlic
Add evaporated milk, cottage cheese and parmigiano to a bowl and microwave for 60 seconds. This helps the sauce get smooth when blending. Blend the sauce for 1-2 minutes until completely smooth. Add to cooked pasta in a very low heat pan, let sit for ~10 minutes. Remove from heat and let cool for another 5-10 minutes, and enjoy!
