2 c FLOUR
2 tb SUGAR
4 ts BAKING POWDER
1 t SALT
2 ea EGG
2 c MILK
4 tb OIL
MELT BUTTER. COMBINE FLOUR, SUGAR, BAKING POWDER AND SALT. BEAT TOGETHER MELTED BUTTER, MILK AND EGG. STIR WET INGREDIENTS INTO DRY MIX UNTIL JUST COMBINED. IT'S ALL RIGHT IF THE BATTER IS STILL LUMPY. HEAT A LARGE FRY PAN OR GRIDDLE. brUSH PAN WITH SOME OIL. POUR BATTER BY SCANT 1/4 CUPFULS ONTO HOT PAN. COOK UNTIL BUBBLES brEAK, THEN TURN OVER AND COOK UNTIL UNDERSIDE IS GOLDEN. REPEAT WITH REMAINING BATTER, brUSHING PAN WITH OIL AS NEEDED.

- 1 1/2 cups buttermilk or buttermilk substitute (See Kelly's Note)
- 1 large egg
- 2 Tablespoons unsalted butter, melted
☝️ Kelly’s Note: No buttermilk? No problem! Add 1.5 tablespoon of lemon juice or vinegar to a liquid measuring cup, then pour in milk (any variety) up to the “1.5 cup” mark. Stir the mixture then let it sit for 5 minutes until it curdles and thickens slightly, then proceed with the recipe as directed.
