How To make Lima Beans with Aji Chiles
Ingredients

each
leek, white part only, finely chopped
2
each
aji chiles, fresh, stems and seeds removed, minced (serrano chiles as substitute)
2
tablespoon
butter
1
tablespoon
olive oil
1
pound
lima beans, baby fresh, or frozen, thawed, (4cups) do not use dried beans
1/2
cup
water, could use 1 cup
1
tablespoon
lemon juice, fresh
1
teaspoon
lemon, or lime zest
1/4
teaspoon
salt
1
pepper, freshly ground
Directions:
Saute the leek and ajis in 1 tb. of the butter and the olive oil for 30 seconds. Add the Lima beans, water, and the citrus juice. Bring to a boil, then reduce the heat, cover and simmer for 8 to 10 minutes or until the beans are tender.
Mix the 1 tb of butter with the citrus zest and the salt and pepper. Drain the beans and add the butter mixture. Simmer for a minute and stir to coat the beans.

I've been exploring the world of peppers more in the last few years than I ever have. I grew over 30 types of peppers last year. Five of the hot peppers I grew stood out both for their productivity and their flavor. These peppers range from 10,000 on the Scoville scale to around 150,000 on the Scoville scale. Many hot peppers are basically hot with little or no taste. The peppers on this list are different. They all hit you with a burst of flavor before the heat sets in. 1 Rotisserie Chicken (just the meat- chopped)
2 can busch's white chili beans
4 oz green chilis
8 oz cream cheese
1 onion
1 red bell pepper (and green)
1-2 jalapenos
2-3 tbsps flour
2 tbsps butter
1 tbsp garlic
1 tsp chicken base
6 cups chicken broth
2 tsps each italian seasoning, cumin, smoked paprika, chili powder
1/2 packet sazon
All Purpose Seasoning to taste
1 tsp worcestershire sauce and hot sauce
1 cup heavy cream
1/2 cup frozen corn
Toppings:
sour cream
shredded cheese
tortilla strips
jalapenos
cilantro

Great chili recipe for these cold winter nights! This recipe is a family favorite and won an award!
White chicken chili
2 pounds chicken breast
Can of great northern beans
1/4 cup white wine
3/4 cup chicken broth
2 cups 1/2 & 1/2
2 cans diced green chiles
1 1/2 cups grated or chunked Monterey Jack cheese
1/2 cup sour cream
1 onion, chopped
1 1/2 tsp chili powder
1 tsp cumin
1 tsp salt
1/2 tsp pepper
1 tsp hot sauce
-Dice the chicken breast into bite-sized chunks & cook until done in 2 TBSP butter & 2 TBSP olive oil. Remove from pan.
-Deglaze pan with 1/4 cup white wine (or chicken broth)
-Cook diced onion until softened
-Make a Roux of 6 oz butter & 1/4 cup flour
-Whisk chicken broth & half-n-half into roux, until it’s a smooth white sauce.
-In crock pot, put cooked chicken, onion, beans (with liquid), diced green chiles, & cheese.
-Add the white sauce, sour cream, and chili powder, cumin, salt & pepper, and hot sauce.
-Cook on low for a couple hours until bubbly, stirring occasionally.

Coach Kitchen Premium Chicken Chili
Serving size: 6 to 8 servings
What you need:
(1) pack of Coach Kitchen Premium Chicken Chili Seasoning
(8) chicken thighs
(2) 16oz cans of white beans
(2) table spoons of oil
(1 1/2) cup of water
Prep time: 5 to 10 minutes
Cook time: 25 minutes
INSTRUCTIONS: Remove the skin and debone thighs. Cut chicken into 1/2 inch chunks. Heat oil in large pot on medium heat and stir in chopped chicken for about 5 minutes or until no longer pink. Stir in seasoning and beans including the liquid. Stir in 1 1/2 cups of water. When it starts to boil or bubble, reduce heat to low, cover and simmer for 20 minutes, while stirring occasionally.
