1 Rotisserie Chicken (just the meat- chopped)
2 can busch's white chili beans
4 oz green chilis
8 oz cream cheese
1 onion
1 red bell pepper (and green)
1-2 jalapenos
2-3 tbsps flour
2 tbsps butter
1 tbsp garlic
1 tsp chicken base
6 cups chicken broth
2 tsps each italian seasoning, cumin, smoked paprika, chili powder
1/2 packet sazon
All Purpose Seasoning to taste
1 tsp worcestershire sauce and hot sauce
1 cup heavy cream
1/2 cup frozen corn
Toppings:
sour cream
shredded cheese
tortilla strips
jalapenos
cilantro
Betty's White Bean Chicken Chili
Betty demonstrates how to make White Bean Chicken Chili. This recipe uses great northern beans, along with cooked chicken, chopped vegetables, and spices.
White Bean Chicken Chili
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped
2 cloves garlic, minced
3 cups cooked chicken (already salted), shredded or cut into cubes
(3) 15-oz. cans great northern beans, undrained
1 tablespoon chili powder (or more, to taste)
½ teaspoon ground cumin (or more, to taste)
3 cups water, adding more if needed as chili cooks
In a large Dutch oven, sauté 1chopped onion, ½ chopped green bell pepper, ½ chopped red bell pepper, and 2 cloves minced garlic in 2 tablespoons olive oil until soft. Add 3 cups cooked, shredded chicken and (3) 14.5-oz. cans undrained great northern beans. Add 3 cups of water and stir until ingredients are well-blended. Bring to a boil over medium heat. Reduce heat to low and cook for about 1 hour. Add water as chili cooks, if needed. Taste for salt, chili powder, and cumin as chili cooks, and add more, if needed. My chili did not need any extra water, salt, chili powder, or cumin. It was delicious! Serve White Bean Chicken Chili with Zesty Pepper-Jack Cornsticks for a hearty and tasty meal. Enjoy! --Betty

-1 teaspoon of cumin

White Chicken Chili Recipe
This creamy white chicken chili recipe is slow-cooked with chiles, caramelized onions, beans, spices, and shredded chicken for a delicious, comforting soup. You may never eat regular beef chili again after trying this. It's that good.
White chicken chili, also known as white chili or chicken chili, is a hearty soup consisting of white beans, chiles, spices, and chicken. While there is no concrete history of the creation of this soup, many believe it to have originated in the Southwest region of the United States during the 1970s to 1980s. The flavors of chicken chili don't mimic that of a classical chili recipe due to the different ingredients used.
A traditional white chicken chili is thick using beans from the soup that are pureed and added back to it to give it thickness. It can also be thickened with a slurry or roux if need be. It is also commonly garnished with quite a bit of shredded cheese before serving. As with any soup recipe, more flavors will begin to marry and present themselves the next day after making it.

• 1-pound dry navy, cannellini, or great northern beans
• 3 tablespoons olive oil
• 3 peeled and medium diced yellow onions
• 1 whole roasting chicken
• 2 seeded and medium diced yellow onions
• 2 seeded and medium diced poblano peppers
• 2 seeded and medium diced jalapeños
• 2 medium diced ribs of celery
• 10 finely minced cloves of garlic
• 3 tablespoons ground cumin
• 1 tablespoon ground coriander
• 2 tablespoons dry oregano
• 1 cup heavy whipping cream
• sea salt and pepper to taste
• Shredded Monterey jack or pepper jack cheese for garnish

Chicken Chili

Ingredients
4 cups chopped yellow onions (3 onions)
1/8 cup good olive oil, plus extra for chicken
1/8 cup minced garlic (2 cloves)
2 red bell peppers, cored, seeded, and large-diced
2 yellow bell peppers, cored, seeded, and large-diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried red pepper flakes, or to taste
1/4 teaspoon cayenne pepper, or to taste
2 teaspoons kosher salt, plus more for chicken
2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
1/4 cup minced fresh basil leaves
4 split chicken breasts, bone in, skin on
Freshly ground black pepper
For serving:
Chopped onions, corn chips, grated cheddar, sour cream
Directions
Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.
Preheat the oven to 350 degrees F.
Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.
