How To make Linguine with Olives and Sun Dried Tomatoes
1 lb Linguine
1/2 c Extra-virgin olive oil
4 Cloves minced garlic
1/4 ts Hot pepper flakes
2 md Ripe tomatoes
chopped
1/2 c Black olives :
cut up
1/4 c Sun-dried tomatoes,
Oil-packed drained and Chopped 1 t Salt
1/4 ts Pepper
1/4 c Fresh basil :
chopped
1/2 c Feta cheese -- optional
In 1 lg pot of boiling, salted water cook linguine for 8 to 10 minutes or until tender but firm; drain well.
Meanwhile, in large skillet, heat half of the oil over medium heat; cook garlic, hot pepper flakes and fresh tomato for 3 to 4 minutes or until fragrant but not browned. Add olives, sun-dried tomatoes, salt and pepper; cook for 2 to 3 minutes or until heated through. Add to pasta along with remaining oil and basil; toss well. Today we are making a delicious Fusilli Pugliesi with a spicy mix of sausage and sun-dried tomatoes.

Recipe:
1 package of Fuilli Pugliesi - (affiliate link)
4 Tbsp. EVOO
2 Fresh Italian Sausages, sweet or hot, casings removed and crumbled
1 Garlic Clove, minced
3 Sun Dried Tomatoes, sliced,
2 Cherry Peppers, quartered
Basil Leaves, for garnish
Salt, to taste
1. Bring a pot os salted water to a boil. Add the pasta and cook as per package instructions. Reserve 1 cup of pasta water, in case needed. Drain the pasta.
2. Add the olive oil to a skillet and saute the garlic over medium heat.
3. Add the sausage and cook until browned.
4. Add the cherry peppers and sun dried tomatoes and cook for about 5 minutes.
5. Add the fusilli pugliesi to the skillet and stir to combine, over medium heat. Add in pasta water or chicken broth, if needed, to create a sauce.
6. Serve with a garnish of basil on top and grated pecorino cheese, if desired.

12 ounces (340 grams) spaghetti + 3 quarts of water (12 cups or 3 Liters) and 1 ½ tablespoons of salt (21 grams)
1½ pounds (700 grams) cherry tomatoes halved
2 tablespoons (30 grams) extra virgin olive oil
1 clove garlic pressed or grated
1 teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes
15 fresh basil leaves + more for garnishing
½ cup (50 grams) parmesan cheese or non-dairy cheese, grated. Add more or less to taste.
