How To make Low Fat Spice Cookies

flour, whole-wheat, sifted

flour, unbleached, sifted

cinnamon

teaspoon
nutmeg
1/4
teaspoon
ginger
1/4
teaspoon
cloves, ground

teaspoon
baking soda
1/4
teaspoon
salt
1/4
cup
butter, or margarine, softened
1/4
cup
promise ultra fat free spread, softened
1
cup
brown sugar, packed
1
each
egg white, whipped
1
teaspoon
vanilla
1/2
cup
sour cream, fat-free
Directions:
Preheat oven to 350 degrees. Prepare baking sheets with cooking spray. In a mixing bowl, combine flours, cinnamon, nutmeg, ginger, cloves, baking soda, and salt. In another mixing bowl, combine margarine, spread, brown sugar, egg white, vanilla, and sour cream. Add dry ingredients with wet ingredients just until moistened. Cover and chill overnight.
On a heavily floured surface (dough will be slightly sticky that's why more flour is needed), roll dough 1/8 inch thickness. Using a 2 1/2 inch cutters, cut dough into desired shapes. Arrange 1 inch apart on prepared baking sheet. Bake for 15 minutes and lightly browned. If desired, decorate cookies with Powdered sugar Icing.

How To Make Christmas Spice Cookies
I love Christmas cookies and these spiced varieties are reminiscent of Dutch speculaas and gingerbread. They are light, crisp and full of flavour well being nicely balanced between sweet and spice. The texture is divine and this recipe is my go-to cookie recipe regardless of whether I'm eating them plain or iced, dunked or on their own.

225gm/ 8oz softened butter
1 cup of coconut sugar
1/2 cup brown sugar
1/2 cup caster sugar
3 cups plain flour
3 tsp cinnamon
1 tsp nutmeg
3 tsp ginger
1 tsp allspice
1/2 tsp cloves
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
Cream the butter and sugar until light and fluffy and add the vanilla extract.
Sift the remaining dry ingredients and gradually add to the butter mixture.
Wrap the mixture in cling film and rest in the refrigerator for 1-2 hours.
Work the dough on a clean board with a bit of flour until the dough is soft and pliable.
Roll out of a floured surface to the dough is 2-3mm in thickness.
Cut the dough into desired shapes with a floured cookie and cutter and place the shapes on a baking paper-lined cooking tray.
Bake at 180C/350F in the oven for 8-9 minutes with the shelf set in the middle of the oven.
Allow the cooked cookies to cool completely on a wire rack before storing in an airtight container.
The cookies will keep for 3-4 days.

1939 Sour Cream Cookies - Old Cook Book Show
This cookie recipe is from the Home Economics textbook used in Spokane Washington in 1939. They were a good cookie, but needed a lot more sour cream than the recipe called for. This is a light spice cookies recipe on the old cookbook show.
Sour Cream Cookies
2 ¼ c. sifted flour (I did sift)
3 t. baking powder
½ t. soda
¼ t. salt
½ c. shortening
⅔ c. packed brown sugar
1 egg beaten
½ c. heavy sour cream (recipe needed at least ½ cup extra)
½ t. cinnamon
¼ t. nutmeg
½ c. raisins
Method:
Sift flour once, measure add baking powder, soda, salt and sift together. Cream butter and add sugar gradually creaming until light and fluffy. Add egg and beat well. Add flour, alternately with sour cream, beating after each addition until smooth. Drop from teaspoon on ungreased baking sheet and bake in a hot oven, 8-10 minutes.

***I know that in the video it sounds like I didn't sift the flour before measuring - But I did. In older recipes like this that ask you to sift, then measure; sifting is important to get the right measurement. Recipes that ask you to measure, then sift; I hardly ever sift.

In a medium sized bowl add
1 1/4 cups (100g) quick oats
Heaping 1/3 cup (45g) whole wheat flour
2 Scoops (60g) Isopures vanilla whey protein powder
2 1/2 Tsp of pumpkin pie spice
1 Tsp cornstarch
1/2 Tsp baking soda
1/4 Tsp of salt
Mix until combined
In a small bowl add your wet ingredients
3/4 Cup (183g) pure pumpkin
1/2 Cup (118mL) calorie-free/low calorie maple syrup (I used Walden Farms)
2 Tbsp (28g) melted coconut oil
1 Tsp of pure vanilla extract
Mix until well combined and pour into dry ingredients
Pour wet ingredients into dry and mix well
Add 1 1/2 Tbsp (21g) unsweetened mini chocolate chips
Mix again
With a cookie scoop make 18 cookies and flatten with a spatula
Now add another 1 1/2 Tbsp of chocolate chips to the tops of the cookies
Bake at 325 degrees | 162 Celsius for 12-15 minutes
