How To make Macaroni & Cheese Souffle
1 1/2 c Corkscrew-shaped macaroni
2 tb Butter or margarine
3 tb Flour
1/2 ts Salt
1/2 ts Paprika
1 ds Cayenne
1 1/4 c Milk
6 oz Natural sharp Cheddar cheese
-- shredded 3 Eggs; separated
Preheat oven to 350 F (moderate). Grease a 2-quart casserole. Cook macaroni according to package directions. Melt fat in a large saucepan. Stir in flour, salt, paprika, and cayenne. Add milk. Cook over moderate heat, stirring until thickened. Remove from heat. Add cheese and stir until melted. Beat egg yolks until light. Fold into macaroni and cheese mixture. Pour into casserole. Bake for 35 to 40 minutes or until center is firm to the touch when pressed lightly. Serve immediately. Macaroni and Cheese Soufflé
This is one of my son's favourites!

1 1/2 cups uncooked elbow macaroni
6 tbsp butter
1/4 cup all purpose flour
1 1/2 tsp salt
Ground black or cayenne pepper to taste
2 cups milk
8 oz of sharp cheddar cheese grated (I use two cups grated cheddar)
6 eggs separated
Cook macaroni according to package directions; drain and set aside.
Melt butter over medium heat in a large saucepan or dutch oven. Blend in flour, salt and pepper; stir well. Gradually add milk, stirring constantly. Continue cooking and stirring until thickened.
Remove from heat and add cheese, stirring until cheese is melted. Beat egg yolk slightly and quickly stir into cheese sauce.
Mix macaroni with cheese sauce. In a separate bowl, beat egg whites until stiff; fold into macaroni mixture.
Transfer mixture to a large (3quart) casserole.
Bake at 475F for 10 minutes. Reduce heat to 400F and bake for 25 minutes longer.

BETH’S BACON MAC & CHEESE BITES
Makes 18 hors d’oeuvres
INGREDIENTS:
1 tbsp (15 g) butter for greasing tins
1 cup (140 g) tiny elbow macaroni
3 tbsp (45 g) butter
2 tbsp (15 g) flour
1 cup (240 ml) milk
1/4 tsp (1.25 ml) cayenne pepper
1 tsp (5 ml) salt
1 minced garlic clove
freshly cracked pepper
1 cup (240 ml) sharp cheddar cheese + ½ cup (120 ml) mozzarella for topping
1/2 cup (120 ml) cooked bacon, chopped
1 egg
2 egg yolks
1/3 cup (40 g) flour
¼ cup (60 ml) chives
METHOD:
Preheat oven to 375F (190C).
Grease a mini muffin tin lightly with melted butter and set aside.
Boil pasta according to package instructions.
Cook bacon in skillet or in microwave. To microwave line a plate with paper towel, place bacon on top, and then place more paper towel on top. Microwave on high for 6 mins until browned and crispy. Allow to cool on towel, and chop into a rough chop.
Then in a large skillet prepare the cheese sauce, melt 3 tbsp butter, add flour and whisk and cook for 1 minute then slowly whisk in milk, whisking all the while, a smooth sauce will develop. Add cayenne, salt, garlic and pepper.
Then add cheddar cheese, and whisk until smooth. Remove from flame and allow to cool slightly.
Drain pasta and transfer it into a large bowl. Add cheese sauce and stir to combine. Then add egg and egg yolks, flour, and bacon. Stir to combine.
Using a mini ice cream scoop portion out into muffin tin, and top with the mozzarella cheese.
Bake for 13-15 mins until golden brown and cheese has melted. Allow to cool to set up and become stable.
Place on platter and top with freshly snipped chives. Serve with champagne! Enjoy!

How to Freeze Cooked Macaroni and Cheese, 14 -16 Servings
This makes a large pan of mac and cheese. Easy to freeze in family serving sizes.
Here's the recipe:
3 - 8 ounce boxes elbow macaroni (24 ounces)
2 pounds of sharp cheddar cheese, shredded
1 2/3 cups non-fat dry milk
5 cups water
1/2 cup butter (one stick) plus one tablespoon
1/2 cup + 1 tablespoon all-purpose flour
2 tablespoons Dijon mustard
1 teaspoon salt
1/8 teaspoon ground nutmeg
Bake in preheated oven 325 degrees for 30-45 minutes until slightly brown on top.
Pan size 12 x 16 x 2 high
Thaw cooked and frozen mac and cheese in the microwave on defrost cycle for best results. This recipe makes 14-16 servings.
