How To make Madras Meat Curry
1 1/2 lb Beef round steak
2 tb Vegetable oil
1 lg Onion, finely sliced
4 Whole cloves
4 Green cardamom pods, bruised
3 Green chiles, seeded, finely
-chopped 2 Dry red chiles, seeded,
-crushed 1 Inch piece fresh gingerroot,
-grated 2 Garlic cloves, crushed
2 ts Ground coriander
2 ts Ground turmeric
1/4 c Water
1/4 c Tamarind nectar, see note
-below Salt to taste Lettuce leaves to garnish Cut beef into 1-ich cubes. Heat oil in a large heavy saucepan, add beef and cook until browned all over. Remove with a slotted spoon and set aside. Add onion, cloves and cardamom to pan; cook, stirring, about 8 minutes, until onion is soft and golden brown. Stir in chiles, gingerroot, garlice, corinder and turmeric; cook 2 minutes. Return beef to pan, add water and cover. Simmer 1 hour. Stir in tamarind nectar and salt; simmer another 20 to 30 minutes, until beef is tender. Serve, garnished with lettuce leaves. Serves 4. Note: Tamarind nectar: Soak a walnut-sized piece of tamarind paste in one cup boiling water about 20 minutes, then squeeze in cheesecloth to extract liquid; discard pulp. Oil

2 tbsp garlic ginger paste
1 tbsp garam masala
2 tsp black pepper
1 tsp salt
1-2 tsp methi or a good pinch!
2 tbsp curry powder – of choice
¼ cup apple cider vinegar / malt vinegar
1 tbsp coriander powder
1 tsp cumin powder
2 tbsp Worcestershire sauce
1 cup beef stock
2 tbsp tomato puree
2 tsp chili powder or more!!
1 can crushed tomatoes
Splash of water as needed
My cooker only has low and high settings - I cooked on low for 5 hours

Ingredients
750g beef (shin, cubed)
2 red onions (sliced) 4 tomatos (quartered)
juice of one lime 1tbsp tomato puree
5 cloves garlic (finely chopped) 2 inch ginger (finely chopped)
1tsp mustard seeds 2tsp ground corriander
2tsp cumin seeds 1tsp turmeric
2 inch peice cinnamon 1 or 2tsp chilli powder
4 green cardomons pods 4 dried red chillies
3tbsp oil 500ml beef or chicken stock
salt and pepper to taste

Half Kg Beef
2 Onions
1 Ginger grated
5 Clove Garlic Grated

2 Stalk curry leaves

3/4 Tsp Garam Masala

3/4 Cup Tin Tomatos
200 Mls Coconut milk

How to Cook Beef Madras Curry
Create this Indian restaurant favourite at home! Our Welsh Beef madras is cooked slowly so all the lovely spices meld together. Perfect with a dollop of cool yogurt on the top and served with rice.
Ingredients:
675g PGI Welsh Beef chuck steak, cubed
Seasoning
2 tbsp oil
2 large onions, peeled and sliced
1 red pepper, diced
3 garlic cloves, crushed
Fresh root ginger (3cm piece), grated
1 tbsp ground turmeric
1 tbsp garam masala
1 tsp ground cumin
1 red chilli, finely chopped
½ tsp chilli flakes
400g tin of chopped tomatoes
1 tbsp tomato purée
400ml beef stock
To serve:
Natural yogurt
Fresh coriander leaves, chopped
Rice
Side salad of diced tomato, cucumber and red onion

Beef Madras Recipes in English:
Ingredients:
1kg Beef (with bones)
1/4 cup Ghee
1 cup Coconut cream
3-4 Cinnamon sticks
7-8 Cloves
2 tsp Lemon juice
1 tsp Ginger paste
1 tsp Garlic paste
1 cup Onion (chopped)
1 tsp Red chili powder
Salt to taste
2 tbsp Coriander seeds
1 tbsp Cumin seeds
1 tsp Turmeric powder
1 tsp Black peppercorn
7-8 Red chilies (dried)
Green coriander for garnish
Instructions:
In a grinder add coriander seeds, cumin seeds, red chilies, black peppercorn, turmeric, grind them well and make a powder.
In a pot boil water, add beef, cinnamon sticks, cloves and let it cook until meat gets tender. Remove the scum from it, your stock is ready, keep it aside.
In a separate pan heat oil, add onion and cook until translucent, then add ginger garlic paste and beef in it and cook.
Add 1 ½ tablespoon of prepared masala powder, red chili powder, salt, beef stock and cook for 2 to 3 minutes.
Then add lemon juice, coconut cream, mix it well and cook for 4 to 5 minutes or until you reach the desired consistency.
Your beef madras is ready. Garnish with coriander leaves and serve hot with boiled rice.
Preparation time: 20 minutes
Cooking time: 60 minutes
Serving: 3-4
