Roasted Tomato Soup, That will Warm Your Heart and Soul! Delicious!
This Roasted Tomato soup is such a comfort delicious meal, that it will warm your heart and soul!
Top quality Dutch oven for bread, whole chicken and stews:
Recipe:
- 3 lbs/1,5 kg cherry tomatoes, you can use big tomatoes, just cut them in half or quarters, and remove the tough part
- 1 big or 2 smaller red onions
- I used 3 small snack peppers, you can use any kind any kind you like
- A whole head of garlic, 8-12 cloves
- 2 sprigs rosemary
- 1,5-2 tablespoons fresh thyme
- Olive oil, a generous amount when roasting the tomatoes
- 1 big or 2 smaller white onion
- 2 tablespoons/30g butter
- 1 tablespoon tomato paste
- 2,75 Cups/660ml vegetable stock, you can use chicken stock too if you want
- 1 tablespoon dried oregano
- Cayenne pepper or chili, according to taste
- 1 teaspoon smoked or sweet paprika
- Half a tablespoon balsamic vinegar
- 1 tablespoon Worcestershire sauce
- Half a teaspoon sugar
- A good handful fresh basil leaves
- 0,5 Cup/120ml heavy cream(optional)
- Salt and black pepper
Note: For a smoother, velvety texture, sieve the soup after blending it!
I don`t mind tasting some of the tomato seeds and the skin, but it`s up to you!
In a large tray mix the tomatoes, garlic, peppers, red onion, rosemary and thyme, add generous amount of olive oil, salt and pepper and roast in a preheated oven, fan on 375F/190C until caramelized, about 50-60 minutes. When ready, saute the white onion in the butter in a fairly large pot, add the tomato paste, mix it and add all the roasted tomatoes from the tray. Add the stock, cayenne pepper, smoked paprika, balsamic vinegar, Worcestershire sauce, salt and pepper, if needed and the fresh basil. Let it simmer on the stove for 8-10 minutes. After that time, take it off the stove and blend everything together. Take it back to the stove and add the cream, when it starts to simmer, turn it off, it`s ready! Taste it and season with more salt and pepper if needed.
Serve with toast with cheese of your choice, I`ve used mozzarella and cheddar!

Bahsh (green rice):
2 cups rice
4 bunches cilantro
1 cup cubed meat or chicken of choice
1 diced onion
1/2 c oil
1/2 c water
1tbsn salt
1 tbsp chicken consome
Pepper
Cumin and coriander
Bake covered at 400F for 1 and 1/2 hours mixing half way through
Osvo-lamb and rice overnight stew:
Grate:
1 apple, 1 onion, and 1 tomato a squeeze of 1/2 a lemon
Add 1/4 cup of oil to pot and above ingredients. Add 2 cups rice, 1 can tomato sauce, lamb bones and 4 cups of water. Season with 1 tbsp of salt and 1 tbsp chicken consome. Cook for 12 hours on low flame.
???? Soup
Intro a 5Qt pot filled with water add meat of choice
Potatoes
Carrots
Onion
Season with S/P chicken consommé, Bay leaves and garlic powder. Cook for 1 hour.
???? Roast chicken:
Season chicken with paprika, S&p, chicken seasoning and oil. Cook covered at 350F for an hour and a half, then uncover till golden brown.
???? Moroccan Salmon:
Salmon Fillet
1-2 Red Chili
1-2 Green Jalapenos
Cilantro
5 Garlic Cloves
1 Tbsp of Tomato paste
1/4 Cup of Paprika
2 tbsp of Tumeric
S/P
1/2 Cup of Neutral Oil
1 Can of Chicpeas
???? Potato salad:
Boil
1 potato, 1 carrot, 3 eggs
Cube above ingredients as well as 3 pickles.
Season with mayo s/p
???? Matbucha Salad:
Dice 1 green pepper, 2-3 tomatoes, 1/2 jalapeños. Slice 4-5 garlic cloves. Sauté in 3 tbsp of oil. Season with salt, paprika and harissa. Let simmer until all the water evaporates.

Every Indian restaurant uses some base gravies for cooking. Sharing with you 3 similar restaurant style base gravy that you can make in bulk and store frozen for up to 90 days!
These 3 base gravy are Makhani gravy, white gravy, onion tomato chop masala gravy.
The makhana gravy base is used to make paneer makhana, dal makhana and butter chicken.
The white gravy base is used to make malai kofta, navratan korma, shahi paneer, kali mirch paneer, kali mirch chicken and many more dishes.
The onion tomato chop masala gravy is used for many things like kadhai chicken, kadhai paneer, baigan bharta, dal tadka and many more.
If frozen properly, each of these gravies can last you up to 90 days, provided they are not defrosted and frozen again.
If you are a working person and do not have time to make fresh gravies every day, these 3 gravy base will come in very handy.

Recipe :
Makhni Gravy
Ingredients:
For base:
8 large tomatoes, chopped
1 medium onion, chopped
2” ginger, chopped
7-8 garlic cloves
2” cinnamon
2 bay leaves
4-5 green cardamoms
Salt to taste
4-5 Kashmiri red chillies
To finish:
¼ cup butter
¼ cup oil
1 tsp caraway seeds
2 tbsp Kashmiri red chili powder
1 cup tomato puree
¼ cup cream
1 tsp garam masala
1 tbsp kashuri methi, crushed
1 tsp honey
Method:
Boil together all the ingredients for the base with 2 cups water. Cover and cook for 20 minutes. Remove from heat, cool and remove the cinnamon stick and bay leaves.
grind to a smooth puree. Heat the oil and butter together in a pan. add the caraway seeds. Add the prepared gravy, tomato puree, Kashmiri red chili powder and the salt to taste. Bring to a boil. Finish with cream and kasuri methi,. You may add honey or sugar to contrl the tartness of the tomatoes.
White Gravy Recipe
Ingredients:
6 large Onions, sliced
¼ cup Cashew nuts
¼ cup melon seeds
2 tbsp ginger garlic paste
4-5 Green cardamoms
2 Green chillies, slit
Salt to taste
1 tsp White pepper powder
To finish:
2 tbsp oil
½ cup Yogurt whisked
¼ cup cream
Method:
In a large pan, take 2 cups water and all the ingredients mentioned for the base.
Bring to a boil and cover and cook for 20 minutes. Remove from heat, cool completely and grind to a smooth paste. To finish, heat oil in a pan. add the caraway seeds, and then the prepared gravy base. Add yoghurt, cream and mix well. Cook for 4-5 minutes. White gravy is ready.
Onion-Tomato Chop Masala Gravy
Ingredients:
5 Onions, finely chopped
5 Tomatoes, finely chopped
½ cup Oil
1 tsp Cumin seeds
2 tbsp ginger garlic paste
1 tsp Turmeric powder
Salt to taste
1 tbsp Kashmiri Red chilli powder
1 tsp Garam masala powder
Method:
Heat oil in a pan. Add the cumin seeds. Add the finely chopped onions and sauté till translucent pink. Add the chopped ginger and green chilies. Sauté till golden. Add the turmeric powder, red chili powder and mix well. Add the ginger garlic paste and sauté till fragrant. Add the chopped tomatoes, mix and cook covered for 5 minutes till the tomatoes re pulpy. Remove the lid and cook over low heat for 15 minutes till the oil floats on the top.
Add salt to taste and garam masala to finish.
