How To make Maple Pecan Pralines
3 c Sugar
1 c Evaporated Milk
2/3 c Light corn syrup
2 tb Butter or margarine
1/4 ts Cream of tartar
2 c Pecan pieces
2 ts Maple flavoring
Combine first five ingredients in a dutch oven; heat to boiling, stirring constantly. Stir in pecan pieces; cook over medium heat, stirring occasionally, unti mixture reaches soft ball stage (236?). Remove from heat; stir in flavoring. Beat with wooden spoon 5 to 8 minutes or until mixture is creamy and begins to thicken. Working quickly, drop by rounded tablespoonfuls onto wax paper; let cool.

Candied Pecans
4 cups whole pecans halves
2/3 cup Brown sugar packed
1 teaspoon Cinnamon
1 teaspoon salt
1 teaspoon Vanilla
1/4 cup Water
Cinnamon sugar
Cinnamon sugar ratio is 1/4 cup white sugar to 1 tbs cinnamon
1/2 recipe if using 2 cups of pecans
Put pecans on cookie sheet and toast in oven for 10 minutes @ 200 degrees
Take a large skillet add brown sugar, cinnamon,salt, vanilla and water and bring slowly to a simmer when it is boiling good add in toasted pecans and stir real good and make sure all are covered in the brown sugar mixture, be carful not to burn. Keep stirring until all liquid is gone, then stir for 1 more minute.
Spread onto parchment paper and use 2 forks to separate each pecan where they are stuck together.
Sprinkle cinnamon sugar over pecans while they are still warm and sticky , let cool off and setup and place in ziplock bags.
