Mexican Pulled Pork
I grew on pulled pork with a sweet flavor profile. Sweet seems to be the go to when folks make it. I'm here to tell you that a savory profile is a great change of pace that I absolutely love. A friend of mine named that helped me get my start in BBQ years ago taught me what he called a Mexican pork butt. He took 2nd place at the American Royal in Pork with this recipe. My good buddy Sean Woodson, AKA Three Woodys BBQ, and I got to talking about Phillip's recipe. Woody went on to tell me about a recipe he was making that was similar but sounded even better to me. It's close to carnitas, but there are no crispy bits in here. Woody came and helped me with a pop up class in September, 2021. This recipe was a huge hit, so we finally decided to write it up and shoot a How To video on it.

Pulled Pork:
2 - 7lb pork butts (I bought a 14lb bag at Costco)
1 cup Mustard or Sriracha
1 cup braising liquid (I used sparkling apple juice but you can use beer, apple cider or plain apple juice)
2 cups Pork Rub:
* 1 cup packed brown sugar
* 4 tbsp. kosher salt
* 4 tbsp. paprika (use smoked paprika if using oven for only)
* 1.5 T garlic powder
* 1.5 T onion powder
* 1.5 T ground cumin
* 1 T black pepper
* 1 T liquid smoke (If using oven only)
Direction:
Pat dry your pork and score the fat
Rub in the mustard or sriracha
Generously season with the pork rub
Smoker:
Prep your smoker and set to 250 degrees and place your pork directly on the rack.
Oven:
Set your oven to 250 and place your pork on a rack over a foil lined sheet pan
Insert your meat thermometer in thickest part and smoke/bake until an internal of 165 has been reached (about 4 hours)
Transfer to a steamer pan, pour in 1 cup braising liquid.
Cover tightly and return to your smoker or oven set at 210 for 6-8 hours until an internal of 203 has been reached (I do this right before bed and take it out in the morning)
Allow to rest covered for 2 hours
Remove the liquid (do not discard) shred your meat, then pour the liquid back in to your shredded pork to your desired consistency
Freeze up to 6 month. Use in sandwiches or soups or over tacos or nachos
BBQ Sauce:
* 3 cups ketchup
* 1/2 cup apple cider vinegar
* 1/2 cup tablespoons brown sugar
* 1/4 cup honey
* 2 tablespoons Worcestershire sauce
* 1 T smoked paprika
* 1 T dry mustard
* 1/2 T garlic powder
Directions:
Combine all ingredients in a saucepot bring up to a boil then down to a simmer for 10 minutes until thickened
Slaw:
* 4 cups shredded purple cabbage
* 1/2 cup Mayo
* 2 green onions thinly sliced
* 1 T vinegar
* salt, pepper and sugar to taste
Directions:
Combine all ingredients
Mix your barbecue sauce with the pulled pork and warm. Place over a toasted brioche bun followed by your slaw and Dill pickles

Garlic & Citrus Mojo Pork - Caribbean-Inspired Tender Roast Pork - Food Wishes
This “Mojo” works perfectly as a marinade for pork shoulder, which is no surprise, since the three main components are garlic, citrus, and herbs, and there aren’t many things they wouldn’t make better. We did something similar with skirt steak years ago, and people loved it, but I think these flavors are even better with this richer, fattier cut of meat. Enjoy!

I made Oven-Roasted Pork Shoulder
10.26 lb. pork shoulder/butt
Trimmed fat
Seasoned with:
1 T salt
1/2 T black pepper
1 T garlic powder
1 T cayenne pepper
1 T chili powder
1 T onion powder
wrap with foil
place into 300 Fahrenheit degree oven for 4 hours
remove foil and cook until internal temp reaches 200 degrees Fahrenheit
