How To make Marinated Fresh Mushrooms
1 lb Firm medium-sized mushrooms
8 Cloves garlic; crushed
-(4 tsp) 3/4 c Olive oil
6 tb Lemon juice
1 ts Salt
1/2 ts Freshly ground black pepper
1 ts Dijon mustard
3 tb Fresh tarragon; finely
-chopped Or 1 tb Dried tarragon
Remove the stems of the mushrooms. Wipe mushrooms with a damp paper towel. In a medium-sized bowl, combine the remaining ingredients. Beat well with a wire whisk. Add the mushrooms and stir to coat them with the marinade. Let stand at room temperature for 3 hours or cover and refrigerate for 1 of 2 days. When ready to serve, bring the mushrooms to room temperature, drain off the marinade, and put a toothpick into each mushroom. Serve on a platter with a cluster of cherry tomatoes and pitted ripe olives in the center. Makes about 6 servings. Source: Just for Starters Cookbook by Gloria Edwinn.

Here's how to make at home delicious mushrooms in olive oil!INGREDIENTS
1kg mushrooms
500ml white vinegar
Whole black pepper
Salt
Garlic
Bay leaf
1l water
Paprika
Parsley
Mint
Seed oil
METHOD
Cut a part of the stem of each mushroom. Wash and strain them.
Cut each mushroom in four vertically.
Pour water and vinegar into a pot. Add pepper and a bay leaf. Wait for it to boil. Add salt and then cook the mushrooms for 3 minutes.
Strain the mushrooms and dry them with kitchen paper.
Place the mushrooms in a bowl, add chili powder, finely chopped garlic, mint, parsley, salt, pepper and mix well.
Fill a glass jar with the mushrooms and fill with oil.

How To Make Marinated Mushrooms
INGREDIENTS:
1 pound small button or Bella mushrooms - cleaned
1 small jar rinsed pimento peppers
3/4 cup jarred drained pearl onions
2-3 tbsp. chopped fresh parsley
Dressing - OR can use favorite Italian, Greek or Vinagrette Dressing
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar / red wine vinegar
1/4 cup finely diced red onions
3-4 cloves minced or sliced garlic
1 tsp. dijon mustard
2 tsp. brown sugar
1/2 tsp. dried oregano
1 tsp. whole black pepper corns
1/4 tsp. crushed red pepper flakes - optional
1 bay leaf
salt and pepper to taste
*Mix above ingredients and whisk well to combine
Clean mushrooms and place in salted boiling water. Cook for 3-4 minutes
until tender. Drain and cool to room temp.
In bowl mix cooled mushrooms, dressing, chopped parsley, drained pimentos
and pearl onions. Gently mix.
Place in lidded container and refrigerate for 8 hours or up to 3-5 days.
Serve at room temperature.
Enjoy.
