INGREDIENTS:
4 large cucumbers - sliced evenly
1 red onion - sliced thinly
½ c. apple cider vinegar
¼ c. extra virgin olive oil
1-2 tsp granulated sugar
½ tsp pepper
¼ tsp salt
DIRECTIONS:
Wash cucumbers and remove the ends and most the peel
Chop evenly into uniform slices and place in a medium size bowl
Remove skin from onion and cut in half, and then into thin slices, add to bowl
Add the vinegar, water, oil, sugar, salt & pepper to the bowl and mix well
Let marinate for 1-2 hours or overnight and serve as a fresh side!

INGREDIENTS:
2 cups cauliflower florets
2 cups cherry or grape tomatoes (~10oz)
2 cups sliced carrots
1 cucumber, seeded then chopped
1 bell pepper (any color), seeded then chopped
For the Vinaigrette:
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
2 Tablespoons minced shallots
4 teaspoons Dijon mustard
2 teaspoons Italian seasoning
2 cloves garlic, pressed or minced
salt and pepper
DIRECTIONS:
1. For the Vinaigrette: add ingredients to a jar with a tight-fitting lid or bowl then shake or whisk to combine. Taste then add more salt, pepper, and/or oil if necessary (this dressing is very tart so add more oil if it's too tart for your taste.)
2. Add vegetables to a very large bowl then dress with 3/4 of the vinaigrette. Toss then refrigerate for 4 hours or up to overnight. Toss with remaining vinaigrette and season with salt and pepper to taste just before serving.

Easy Marinated Salad Recipe
Ingredients:
1 (15 ounce) can peas, drained
1 (15 ounce) can shoe peg corn, drained
1 (15 ounce) can green beans, drained
1 (2 ounce) jar pimentos
1 cup chopped celery
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1 cup white sugar
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 cup vegetable oil
3/4 cup white wine vinega
Directions:
Mix together the peas, corn, green beans, pimentos, celery, bell pepper and onion.
In a saucepan over medium heat, combine the sugar, black pepper, salt, oil and vinegar. Bring to a boil and pour over salad; mix well to coat. Refrigerate for 24 hours.
