How To make Mediterranean Grilled Chicken Salad
2/3 lb (2 medium) potatoes
-- cut into 3/4-inch cubes 4 oz Mushrooms; halved
4 oz Green beans; halved,
-steamed until crisp-tender
VINAIGRETTE:
1/4 c Olive oil
2 tb White wine vinegar
1 Garlic clove; minced
2 ts Minced fresh tarragon; OR..
3/4 ts Dried tarragon
2 ts Dijon-style mustard
1/4 ts Sugar
1/4 ts Salt
1/8 ts Pepper
2 Chicken breast halves
(boned and skinned) :
(about 6 ounces each) 1/4 c Chopped red onion
Halved cherry tomatoes -- for garnish In 1-quart saucepan over medium heat cook potatoes, covered, in 2 inches boiling water until tender, about 15 minutes; drain. Meanwhile, make vinaigrette: In bowl whisk together all vinaigrette ingredients. Place potatoes, mushrooms and beans in separate piles in large shallow dish; drizzle with 1/3 cup of the vinaigrette to coat. Cover; let stand 15 minutes. Heat broiler. Meanwhile, in bowl add chicken to the remaining vinaigrette; cover and let stand 15 minutes. Remove chicken from vinaigrette (discard vinaigrette); broil 4 to 5 inches from heat source about 8 minutes until juices run clear when chicken is pierced, turning once. To serve, slice chicken breasts and arrange on 4 plates with potatoes, mushrooms and beans, dividing equally. Sprinkle with onion and garnish with cherry tomatoes. Garlic Grilled chicken, Greek Style!
Simple to make, garlic grilled chicken recipe. This one is Greek style with lemon, herbs and garlic served with a yogurt dip. If you have time, marinade it overnight, otherwise 2 hours is fine. A perfect recipe for entertaining whether inside or outside for a tasty BBQ. If inside, make sure you heat up that griddle pan so you get plenty of smoky char flavour. For the dip, you can leave out the cayenne pepper if you don’t like spicy but it’s awesome spicy! Use a good quality full fat Greek natural yogurt and fresh dill for that beautiful flavour. Serve it with potato wedges and a Greek salad, see my recipes. Pita bread also goes well. Enjoy my Garlic Grilled chicken Greek Style!

How to eat healthier | Mediterranean Chicken Salad | Kravings
The hardest part of this recipe is spelling Mediterranean correctly. This salad is simple, it borrows from ingredients and flavours from the region from the salad to the pan fried crusty Chicken on top. This has it all - Chicken, Greens, Tomatoes, Olives, Pine nuts, beans and is tossed in a homemade dressing - it’s perfect!
Here are the ingredients and steps to make this recipe!
Middle Eastern Salad
Dressing
4 - 6 tbsps Olive Oil
Juice of 1/2 Lemon
1 tbsp minced Garlic
1/2 tsp Oregano
1 tsp Aleppo Chilli powder
1/2 tsp dried Mint
1/2 tsp Salt
2 Chicken breasts here ( 1 lb each)
1 tsp Salt or to taste
1 tbsp Chicken Shawarma spice
1 tsp Aleppo Chilli powder
1 tbsp minced Garlic
1 tsp Pomegranate Molasses
Salad
1 cup mixed Greens
2 cups Parsley leaves
1 cup halved, Cherry Tomatoes
1 cup cubed Cucumbers
1 cup mixed beans
2 tbsps sliced Olives
2 tbsps Arabic style pickled Turnip
1 cup green Pepper
1 cup Pinenuts and roasted Chickpeas
Mix all the dressing ingredients together
Make slits in the chicken breasts and mix together with the marinade
Pan fry the chicken breasts on both sides till cooked
Mix together all the salad ingredients and toss with as much dressing as per your taste
Serve with the chicken and enjoy
