How To make Classic Mediterranean Salad
1 md Head romaine lettuce, torn
3 sm Toamtoes, diced
1 md Cucumber, sliced
1 sm Green bell pepper, sliced
1 sm Onion, cut into rings
6 ea Radishes, thinly sliced
1/2 c Parsley, chopped
1/3 c Olive oil
3 tb Lemon juice
1 ea Garlic clove, crushed
Salt & pepper 1 ts Mint
Pita halves Combine lettuce, tomatoes, cucumber, pepper, onion, radishes & parsley in a salad bowl. Whisk together olive oil, lemon juice, garlic, salt, pepper & mint. Pour over salad & toss to coat. Serve immediately with warm pita halves.

The Mediterranean diet is based on the traditional foods people used to eat in countries like Italy and Greece back in 1960. Researchers noted that these people were exceptionally healthy compared to Americans and had a low risk of many lifestyle diseases.
The main characteristic of this diet is that it's rich in whole grains, fruits and vegetables, legumes, nuts, fish, olive oil, and moderate amounts of dairy products like cheese or yogurt. It also contains moderate amounts of red wine with meals (1-2 glasses per day).
People who follow this diet tend to have lower blood pressure levels than those who don't follow it which can help reduce their risk for heart disease. They also have lower cholesterol levels which can help reduce their risk for stroke development as well as Alzheimer's disease development later on down the road if they live long enough to get it!
