How To make Mediterranean Grilled Chicken Salad
2/3 lb (2 medium) potatoes
-- cut into 3/4-inch cubes 4 oz Mushrooms; halved
4 oz Green beans; halved,
-steamed until crisp-tender
VINAIGRETTE:
1/4 c Olive oil
2 tb White wine vinegar
1 Garlic clove; minced
2 ts Minced fresh tarragon; OR..
3/4 ts Dried tarragon
2 ts Dijon-style mustard
1/4 ts Sugar
1/4 ts Salt
1/8 ts Pepper
2 Chicken breast halves
(boned and skinned) :
(about 6 ounces each) 1/4 c Chopped red onion
Halved cherry tomatoes -- for garnish In 1-quart saucepan over medium heat cook potatoes, covered, in 2 inches boiling water until tender, about 15 minutes; drain. Meanwhile, make vinaigrette: In bowl whisk together all vinaigrette ingredients. Place potatoes, mushrooms and beans in separate piles in large shallow dish; drizzle with 1/3 cup of the vinaigrette to coat. Cover; let stand 15 minutes. Heat broiler. Meanwhile, in bowl add chicken to the remaining vinaigrette; cover and let stand 15 minutes. Remove chicken from vinaigrette (discard vinaigrette); broil 4 to 5 inches from heat source about 8 minutes until juices run clear when chicken is pierced, turning once. To serve, slice chicken breasts and arrange on 4 plates with potatoes, mushrooms and beans, dividing equally. Sprinkle with onion and garnish with cherry tomatoes. Ingredients
Chicken Fillets – 3
Garlic Cloves – 3
Dijon Mustard – 1 Tablespoon
Dried Mixed Herbs – 1 Tablespoon
Honey – 1 Tablespoon
Olive Oil – 2 Tablespoon
Salt – 1 Teaspoon
Black Pepper Powder – 1 Teaspoon
Baby Gem Lettuce – 8-10 leaves
Red Onion – ½
Cucumber – ¼
Black Olives – 10 nos
Red Pepper - 1
Feta Cheese – 50 gms
Sun-Dried Tomatoes – 2 nos
For Salad Dressing:
Honey – 1 Tablespoon
Dijon Mustard – ½ Tablespoon
Lemon – ½
Mayonnaise – 2 Tablespoon
Olive Oil – 2 Tablespoon
Method
Score the Chicken Fillets
Marinating: In a bowl, add minced garlic, olive oil, salt, black pepper powder, dried mixed herbs, Dijon mustard, honey and mix well.
Then add the chicken fillets and coat well. Leave it in the fridge for an hour.
Heat a non-stick pan and add olive oil. When the oil is hot add the chicken fillet. Do not turn the fillet immediately and wait until it has turned golden brown on one side. Once it has cooked on one side turn it over and cook until the chicken is fully done.
Dressing: Mix all dressing ingredients well. Olive oil, honey, Dijon mustard, mayonnaise and lemon juice. Let it combine fully.
In a large bowl, add gem lettuce, red onions, tomatoes, feta cheese, red pepper, cucumber, olives and sun-dried tomatoes. Add 2-3 tablespoons of salad dressing or as required and toss the salad.
Assembling the dish:
On a plate place some of the salad. You can add croutons if you like. Then keep the grilled chicken on the salad and garnish with a herb of your choice.

INGREDIENTS
(For Dressing)
Olive oil - 30 milliliters
Lemon juice - 35 milliliters
Water - 30 milliliters
Red wine vinegar - 30 milliliters
Dried basil - 1 1/2 teaspoons
Dried oregano - 1 1/2 teaspoons
Garlic - 2 teaspoons
Salt - 1 teaspoon
Crushed black peppercorns - 1/2 teaspoon
Dried parsley - 1 1/2 teaspoons
(For Grilled Chicken)
Chicken breast - 2
Prepared dressing - 70 milliliters
Olive oil - for grilling

Romaine lettuce - 200 grams
Onions - 75 grams
Cucumber - 150 grams
Tomato - 130 grams
Black olives - 1 tablespoon
Prepared dressing - 40 milliliters
Avocado
Prepared dressing - for garnishing
PREPARATION
(For Dressing)
1. In a mixing bowl, add all the ingredients and mix it well.
2. Keep aside.
(For Grilled Chicken)
1. In a bowl, add 2 chicken breast, 70 milliliters prepared dressing and mix it well.
2. Marinate for 20 minutes.
3. Heat some olive oil in a grill pan, add the marinated chicken in it.
4. Cook for 8 - 10 minutes on medium heat.
5. Flip it to the other side.
6. Cook until it turns golden brown in color from all sides.
7. Remove it from heat and place it on a board.
8. Cut it into slices.
9. Keep aside.
