How To make Memphis Style Dry Marinade For Ribs
3 tb Paprika; Hungarian, mild
2 ts Seasoned Salt
2 ts Black Pepper; freshly ground
2 ts Garlic Powder
1 ts Cayenne; not too hot
1 ts Oregano
1 ts Dry Mustard; S&B Sunbird
1/2 ts Chili Powder; or more
1 ts Thyme
1 ts Coriander
2 ts Green Peppercorns; dried
1 ts Allspice; Jamaican powdered
: Grind ingredients until fine and combine well. Hand rub this dry marinade on washed and dried spareribs several hours up to several days before smoking or cooking. Pigskin Barbeque Presents.....
Our version of Memphis Style BBQ Rub which can be used on ribs, butts, and even brisket!
It has many of the Memphis staples when it comes to rubs and seasonings, like paprika, cayenne, dry mustard and so on. Here is our recipe!
This recipe makes enough for 3 racks of baby back ribs or 2 racks pork of spareribs.
Some products may not be in your local store so links are included.
1/4 cup Sweet Paprika
4 1/2 teaspoons Ground Black Pepper
4 1/2 teaspoons Dark Brown Sugar
1 tablespoon Kosher Salt
1 1/2 teaspoons Celery Salt -
1 1/2 teaspoons Cayenne Pepper
1 1/2 teaspoons Garlic Powder
1 1/2 teaspoons Dry Ground Mustard -
1 1/2 teaspoons Ground Cumin -
1 teaspoon Ground Ginger -
Mix well and shake on meat at least 2 hours before cooking.

Memphis Style Dry Rub Recipe
Memphis Style Pork Rub
This is a great all around rub for pork butt and ribs. Why spend a lot of money on rubs when you can make them at home with spices you more than likely have in your pantry right now!
1/2 Cup - Dark Brown Sugar
1 Tsp - Sea Salt
1 Tsp - Chili Powder
1 Tsp - Mustard Powder
2 Tbsp - Onion Powder
2 Tbsp - Garlic Powder
1 Tsp - Cumin
2 Tsp - Black Pepper
1 Tsp - Coriander
1. Measure out each spice and place into a cereal sized bowl.
2. Mix with fork or cheap coffee grinder to get all or most of the lumps out.
3. Apply to meat and enjoy!
When you use it on a butt or ribs give them a liberal coating of this rub enough to change the color of the meat. Let the meat rest for approximately 30 minutes before you start cooking. This will help the meat soak in the rub before you start cooking.
I will make a episode soon that shows how to make this rub with the spices in their natural form to maximize freshness.

How to make Memphis style BBQ ribs. BBQ ribs recipe
In this video I prepare and cook pork spare ribs with a taste of Memphis by using the Rendezvous rub and sauce. Also I use a mop while cooking these ribs, that is the actually recipe that Rendezvous uses on their ribs. My ribs are cooked low and slow, unlike the traditional Rendezvous ribs, and made for some very tender and flavorful ribs. I've included a link right here, for there products that are available on Amazon.com:

Ingredients
Spare rib rack 2 , membrane removed
Rub 1⁄2 Cup (8 tbs) (Rendezvous)
Vegetable oil 1⁄4 Cup (4 tbs)
FOR MOPPING SAUCE
Water 1 Cup (16 tbs)
White vinegar 1 Cup (16 tbs)
Rub 4 Tablespoon (Rendezvous)
Bbq sauce 8 Tablespoon (Rendezvous)
Directions
GETTING READY
1. Preheat the grill dome to 225 F.
2. Brush oil on the spare rib and then spread the rub all over.
MAKING
3. Put maple wood for smoking. Place the ribs on the grill and let them cook for about an hour.
4. Meanwhile mix together water, white vinegar, rendezvous rub and rendezvous sauce in a pot. Heat the mopping sauce on a stove top so that everything is well combined.
5. Mop the sauce on the ribs and continue to cook for another 3 1/2 hours. Make sure to mop the sauce every one hour on the ribs.
6. Remove the ribs from the grill and place them on a tray. Wrap an aluminium foil around the ribs and let them rest for 30 minutes.
SERVING
7. Slice and serve the ribs all by themselves or with a sauce of your choice.
