How To make Mexican Cheese Squares
5 lg Eggs
1/4 c All-purpose flour
1 pn Salt
3/4 ts Baking powder
4 oz Can green chile peppers or
diced Fresh jalapeno peppers :
deveined and seeded 1 c Sour cream
2 c Packed, grated Cheddar
-cheese (1/2 lb.) 1 To 2 tb. Mexican hot sauce
1 tb Fresh cilantro leaves; torn
-- no stems 1 tb Unsalted butter
In a large mixing bowl, whisk together eggs, flour, salt and baking powder until smooth. Stir in diced chile peppers, sour cream and cheese. Add hot sauce to taste and cilantro. Melt butter in an 8" square baking dish. Pour mixture into dish and spread with a spatula. Bake at 400 F. for 15 minutes, then turn heat down to 350 F. and bake an additional 30 minutes, or until toothpick inserted in center comes out clean. Cool slightly, then cut into squares to serve. To freeze, wrap - uncut - in foil, then place in airtight freezer bag. Reheat, unthawed, in foil wrapping in a moderate oven until heated through, about 25 minutes. Yield: About 24 squares. Cinnamon Sugar Cheesecake Bars
RECIPE!
Yields: 12 bars
2 tubes crescent dough
16 oz cream cheese
1 egg
1 cup sugar, divided
1 tsp vanilla
2 Tbsp. cinnamon
Preheat oven to 350°F/180°C. In a bowl, beat cream cheese until smooth. Add 1/2 cup sugar, egg, and vanilla, and beat until smooth. Roll out crescent dough and pinch the seams together. In a small bowl, mix the remaining 1/2 cup sugar with the cinnamon. In a greased 9x13 baking dish, sprinkle half of the cinnamon sugar. Lay down one crescent dough rectangle. Spread on cream cheese filling. Top with the other crescent dough rectangle, and sprinkle on the remaining cinnamon sugar. Bake 30 minutes. Cool completely, then cut into 12 squares. Enjoy! I'm bringing you another cooking video as we're still in lockdown and was wonderfully surprised when Philadelphia Cream Cheese reached out asking if I have any snack recipes to share...of course I do! (fyi - personal favourite is the instant noodle one because it's just SO EASY)
None of these recipes take more than 15 minutes, 20min tops if you're slow or watching this video as you cook for instructions. Or you can find the written instructions for each recipes here:
►Mexican Grilled Corn - Street Food Style
2 ears of corn
1/4 cup of mayonnaise
3/4 cups of Philly cream cheese
1/2 cup Parmesan cheese
2 wedges of lime to squeeze
Pinch of paprika
►Spicy Instant Noodles with Cream Cheese
1 packet of spicy instant noodles of your choice
Cream cheese (as much or as little as you want)
►Cream Cheese Deviled Eggs
4 eggs
1 1/2 tablespoon of mayonnaise
1/2 tablespoon of cream cheese
1/2 teaspoon of white vinegar
1 teaspoon of dijon mustard

100ml milk
200ml whipping cream
200g cream cheese

►Jalapeño Poppers
5-10 Jalapeno peppers
200g cream cheese
1 cup of Cheese (parmesan and cheddar)
1 sprig of spring onion
Paprika and garlic powder to taste
A handful of potato chips
►Avocado & Cream Cheese Smash on Toast
Half a ripe avocado
A few slices of red onion
Cream cheese to spread
2 slices of bread of your choice (I recommend Rye bread)
Salt and pepper to taste

THE BEST GROUND BEEF NACHOS - EASY QUESO ROTEL DIP
Nachos are always a comfort food - who doesn't love cheese? Well I'm here to share a Nachos recipe made with ground beef, velveeta, and Rotel that you NEED to try! Can also be used more specifically as a Rotel Dip. These are the perfect snack or appetizer for any party or get together. I hope you enjoy!
INGREDIENTS:
- Garlic Salt to Season
- 1 TBSP of oil to cook ground beef
- 1 lb of ground beef
- 16 oz block of Velveeta cheese (Original)
- Your choice of tortilla chips
- One 10 oz can of Rotel (I used the Mild version)
- 1/2 cup of water
- OPTIONAL: Pico de Gallo or Guacamole
DIRECTIONS:
- Begin by cooking ground beef fully, set aside once fully cooked
- Cut Velveeta cheese into small squares (for easier melting)
- In a larger pot or saucepan, pour half of the cheese, the entire Rotel can, and 1/4 cup of water and cook over a Low heat. Stir continuously.
- Once most of the cheese is melted, pour the rest of the cheese in and melt completely.
- After all cheese is melted, add in 1 cup of cooked Ground Beef and 1/4 cup of water. Mix in completely.
