Mexican Omelet
Ingredients:
3 large eggs
1-2 Jalapenos, deseeded and diced
1 roma tomato, deseeded and diced
¼ cup diced onion
1 tbsp water
2 tbsp olive, canola, or vegetable oil
1 tbsp butter
½ cup of shredded mexican cheese
Directions:
Deseed and dice 1-2 jalapenos, 1 roma tomato and ¼ cup of onion. Set aside. Mix 3 large eggs and 1 tbsp water in a medium bowl. Whisk the egg mixture for a full minute to impart some air into the eggs. This will ensure that your omelet is light and fluffy. Heat a medium to large nonstick skillet on medium heat and add 1 tbsp oil. Once the oil is hot, add the diced vegetables and saute for 2 minutes. Be sure not to overcook them. Now put them in a bowl and set aside. Clean the pan out with a paper towel and heat the pan on low for a full minute; then add the egg mixture to the pan. Let the eggs sit for a minute. Now separate small pockets in the middle of the eggs so that the mixture has an opportunity to filter down and cook through. Once you see that the eggs are no longer “runny” on top, you can add your sauteed vegetables to one side of the omelet. You can also add the cheese at this time. Carefully fold the side with no veggies over the other side. Cook for an additional minute. You can flip the omelet and cook for another minute, and top with some more cheese. Slide the omelet onto a plate and top with cilantro and serve with sliced avocados and tomatoes. Enjoy!

Mexican Omelette Video Recipe cheekyricho
Video Cooking Demonstration and recipe for Mexican Omelette. Budget friendly fast breakfast or brunch, perfect for after the game or late night supper. We hope you give it a try, maybe add some extra chilli sauce to kick start those taste buds.
INGREDIENTS:
5 eggs
30 grams water
40 grams mushrooms
vege salt and pepper to taste
30 grams grated tasty cheese
50 grams diced capsicum
50 grams diced tomato
40 grams diced onion
120 grams diced ham
40 grams butter
1 spring onion sliced.
Jalapeno Chilis to serve
METHOD:
Fry off the vegetables in half the butter until much of the water from them has reduced, add ham and brown.
Remove from pan and wipe clean. Beat eggs and water in Thermochef jug until fluffy on speed 7.
Add remaining butter and half the egg mixture to the pan over a low heat and cook a couple of minutes until starting to set, add half the ham/.vege mixtrue down the middle of the omelette, sprinkle with half the cheese and then turn half of omelette onto itself. Turn of heat and serve immediately with chilli peppers.
Repeat with remaining ingredients.

-Aloo (Potato) 1 medium
-Gajar (Carrot) 1 medium
-Hari mirch (Green chillies) 2
-Bund gobhi (Cabbage) 1/4 part
-Pyaz (Onion) ½ part
-Tamatar (Tomato) 1 small
-Anday (Eggs) 3-4
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Haldee powder (Turmeric powder) 1/4 tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Kali mirch powder (Black pepper powder) 1/4 tsp
-Cooking oil 2 tbs
-Lal mirch powder (Red chilli powder) 1/4 tsp or to taste
-Namak (Salt) 1/4 tsp or to taste
-Cooking oil 1-2 tbs
Directions:
-Peel & cut potato and carrot into cubes & set aside.
-Cut green chillies,cabbage & set aside.
-Chopped & deseed tomato and onion & set aside.
-In a bowl,add eggs and whisk well.
-Add salt,red chilli powder,turmeric powder,red chilli crushed,black pepper powder,whisk well and set aside.
-In frying pan,add cooking oil,potato and mix.
-Add red chilli powder,salt and fry for 4-5 minutes.
-Add green chillies & mix.
-Add carrot,cabbage,mix well and cook for 1-2 minutes.
-In egg mixture,add cooked potato & cabbage mixture and mix well.
-In frying pan,add cooking oil,egg omelet mixture and spread evenly,cover and cook on low flame for 5-6 minutes then flip and cook for 2-3 minutes & serve!

-Bowl mein anday dal ker ache taran whisk ker lein.
-Namak,lal mirch powder,haldee powder,lal mirch crushed aur kali mirch powder dal ker ache tarhan whisk karein & side per rakh dein.
-Frying pan mein cooking aur aloo dal ker mix karein.
-Lal mirch powder aur namak dal ker mix karein aur 4-5 minutes kliya paka lein.
-Hari mirch dal ker mix ker lein.
-Gajar aur bind gobhi dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Anday ka mixture mein cooked aloo & bund gobhi mixture dal ker ache tarhan mix karein.
-Frying pan mein cooking oil aur anday ka mixture dal ker evenly pheela mein aur dhak ker halki ancch per 5-6 minutes kliya paka lein phir flip karein aur 2-3 minutes kliya paka lein & serve karein!

-Doodh (Milk) 3 tbs
-Swiss premium Original cheese cream cheese spread ½ Cup or Cheddar Cheese Cream Cheese spread ½ Cup
-Lehsan powder (Garlic powder) ½ tsp
-Hara dhania (Fresh coriander) chopped 2 tbs
-Doodh (Milk) 2 tbs
-Cooking oil 1-2 tbs
-Lehsan (Garlic) chopped ½ tbs
-Shimla mirch (Capsicum) chopped ½ Cup
-Tamatar (Tomato) deseeded & chopped 1 medium
-Hara pyaz (Green onion) chopped ½ Cup
-Hari mirch (Green chilli) chopped 1 tsp
-Cooking oil 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In a bowl,add eggs,salt,black pepper powder,milk,whisk well & set aside.
-In another bowl,add original cheese,garlic powder,fresh coriander & milk,whisk well & set aside.
-In a frying pan,add cooking oil,garlic & mix well.
-Add capsicum,tomato,green onion,green chilli,mix well & cook for a minute & set aside.
-In frying pan,add cooking oil,egg mixture and cook on low flame for a minute until eggs starts to set.
-On one side of egg omelet,add & spread stir fried vegetable mixture then spread cheese mixture over it.
-Carefully flip omelet,cover & cook on low flame for 2-3 minutes.
-Sprinkle fresh coriander and serve with toasted bread slices.
