How To make Mexican Chicken Bake
1 pk Flour tortillas
1 c Ro-tel tomatoes and onions
Fryer chicken 1 c Cream of chicken soup
1 c Cream of mushroom soup
Onion, chopped 1 t Garlic salt
1 t Chili powder
1/2 lb Cheddar cheese
Oil chicken until tender. Remove, reserving broth. Remove skin and ones from chicken and cut into bite sized pieces. Grate Cheese and ash Tomatoes. Combine chicken, Onions, Cheese, Garlic Salt, Chili owder and Tomatoes. Drop tortillas into bOiling chicken broth until oftened. Line large baking dish with softened tortillas. Add chick- n mixture. Pour the 2 cans of soup over the chicken. Bake at 350 egrees for 35 minutes or until bubbly and hot.

INGREDIENTS (for 2 people)
2 chicken breasts
250g halved cherry/plum tomatoes
clove of garlic
1 large union (sautéed in a little olive oil with chopped garlic)
1 can of black beans (washed and drained)
Chopped coriander (cilantro)
1/2 avocado
2 limes
1/2 lemon
Olive oil
Cracked pepper
Paprika
Mild chilli powder
Cayenne pepper

Mexican Chicken Casserole ingredients:
2 lbs (3 or 4) chicken breasts halved
Salt & Pepper to taste
8 oz (3 cups) shredded Mexican cheese divided
1 cup (8 oz) sour cream
14 oz (or 2 7 oz cans) green chilis with their juice
Casserole toppings to serve on top:
1 avocado
1 medium tomato diced
handful of chopped cilantro
