How To make Mexican Salsa Chicken
2 ea Whole no bone,no skin breast
1/3 c Flour
1/8 ts Garlic powder
1/8 ts Paprika
1/2 ts Chili powder
3 tb Oil
1/4 c Salsa
4 oz Shredded Mont Jack cheese
Pound chicken 1/4 inch thick. In shallow dish combine flour, garlic powder, paprika and chili powder. Coat chicken with flour mixture. Heat oil in large skillet over med-high heat. Cook in oil 3-4 mins each side until lightly browned and no longer pink. Reduce heat, spoon 1T of salsa onto center of each piece of chicken. Sprinkle with cheese. Cover and cook until cheese melts. Years ago I used to have a restaurant down in the Tex-Mex and taqueria territory of San Juan, Texas.
In an effort to serve consistent, delicious salsa roja to the customers I needed to make large batches at a time. This is the exact recipe I came up with that kept everyone coming back for more.

5 roma tomatoes
5 serrano peppers
A handful cilantro
¼-⅓ Onion
1 Can crushed tomatoes
3 Canned Chipotle Peppers in Adobo Sauce
Salsa Chicken - Fast Salsa Chicken and Rice Recipe
This Salsa Chicken Recipe is super easy and was way better than I expected it to be. The salsa adds a ton of great flavor. This is a healthy chicken recipe. This would also be good to add a can of black beans to. Here are the ingredients for this salsa chicken and rice recipe:
- 4 to 5 chicken breasts, seasoned with salt and pepper, cut into 1 pieces.
- 1 jar of your favorite salsa or use homemade if you have it.
- 2 cups of chicken broth, you can use chicken bullion cubes if you wish.
- 2 1/2 cups of instant white rice.
- 2 Tb of olive oil to cook the chicken breast in.
Directions:
Heat the olive oil in an electric skillet or pan. Add the chicken breast and cook for 5 - 10 minutes or until it's cook through. Next add the salsa and chicken broth, bring to a boil.
After the mixture is boiling, turn the heat off and stir in the rice, then add the cheese to the top. Cover the fryer or pan and let it set for 5 - 10 minutes or until the rice is soft and has absorbed the water.
Serve by itself or add hot sauce if you like. Enjoy your delicious Salsa Chicken!

4 Cups Mild Salsa Sauce
2Tbsp Tajin Seasoning
2 Cups Water
1 Cup Brown Rice ( 2 min ) quick cook
1 tbsp parsley flakes
Chives to garnish
Makes enough for 4 or 5 people
