How To make Mincemeat Cake
2 1/2 c Flour
2 ts Baking powder
1 ts Soda
1 ts Salt
1/2 ts Cloves
1/2 ts Nutmeg
1/2 ts Cinnamon
1/2 c Shortening
1 1/2 c Sugar
3 Eggs
1 c Milk
1 ts Vanilla
1 1/2 c Mincemeat
1 c Chopped nuts
CARAMEL FROSTING:
2 c Brown sugar
4 tb Butter
6 tb Shortening
1/2 ts Salt
1/2 c Milk
3 c Confectioners' sugar
Heat oven to 350 F. Grease and flour three 9-inch cake pans. Set aside. Sift together flour, baking powder, soda, salt, cloves, nutmeg and cinnamon; set aside. Cream shortening until light and fluffy. Slowly add sugar. Beat until creamy. Add eggs 1 at a time, blending after each addition. Combine milk and vanilla. By hand, stir into creamed mixture alternately with the dry ingredients, starting and ending with the dry. Blend thoroughly after each addition. Add mincemeat and nuts. Stir to blend. Pour into prepared pans. Bake at 350 F. for 35 minutes or until a toothpick inserted near center comes out clean. Remove from oven. Invert pans onto cooling racks. Leave for 10 minutes. Remove cake from pans; cool completely. Frost with caramel or your favorite frosting. To make caramel frosting: In a saucepan, combine brown sugar, butter, shortening and salt. Bring to boil, stirring constantly. Slowly add milk. Bring back to boil and cook 3 minutes. Cool slightly. Add confectioners' sugar. Beat until creamy and of spreading consistency. Oh hi there! You must be wondering what else you can make with all that delicious mince meat you made a couple of weeks ago. Well behold, The Mince Pie Cupcake. A Christmas Crumbs & Doilies classic! And hopefully it will become one of your favourites!
For the pastry stars
110g plain flour
50g cold butter
Pinch of salt
1 tbs cold water
Demerara sugar and an egg
For the cupcakes
125g self raising flour
125g caster sugar
2 tsp mixed spice
1/4 tsp ground ginger
1/4 tsp bicarbonate of soda
65g caster sugar
60 light soft brown sugar
75g mince meat
3 tbsp brandy-soaked currants
100g browned butter, left to cool completely
40g soft butter
2 lg eggs
1.5 tbsp milk
For the buttercream
150g soft butter
340g icing sugar, sifted
Zest of an orange
2 tbsp brandy
2 tbsp orange juice

To us, nothing says Christmas vibes better than a warm mince pie (and possibly a hot Mulled Wine ;) )

For the Orange and Spice Shortcrust Pastry:
Preheat Oven to 170C fan assisted (190C non fan)
225g Plain Flour
2 tbsp Icing Sugar
150g Cold Unsalted Butter
Pinch of Salt
3 tbsp ice-cold Water

125g Sultanas
65g Candied Orange Peel

Super moist fruit cake Complete Written Recipe:
This fruit cake is a simpler and easier version of making a traditional fruit cake or old-fashioned fruit cake.
In this Easy fruit cake recipe we don't need any soaking of dry fruits; but still the raisins,candied peels,cranberries and other dried fruits will be juicy and plumpy as they are boiled in liquid and then added into the cake batter.
This video will show you one of the least messy ways that we can make a fruit cake.We don't need any stand mixer/hand mixer to make this cake.A sauce pan and a wooden spoon are the only major tools to make this fruit cake.
In two steps we can make this super moist fruit cake batter.
Step1:
Boil the dry fruits in a sauce pan with butter sugar and water.
Step2:
Add all the rest of ingredients into this saucepan after its cooled.
Step3:
Bake the fruit cake @ 320 F for 75-90 minutes.
The cake is so soft and moist and the aroma of spices makes this fruit cake, more flavorful.
