Easy Egg Muffin Recipe | Mini Vegetable Quiches Without The Crust
Quiche is a baked savory open flan/tart usually consisting of pastry crust filled with eggs, cheese, cream/milk and vegetables, meat or seafood. They can be made using any of your favorite vegetables, meats, and cheeses and you can make them for breakfast, lunch or dinner. Quiche is the ultimate crowd-pleasing menu item and it can be served hot or cold. To make quiches at home you can use premade pie crust or you can just make one on your own. But in this recipe, I've shared a very easy one that doesn't require you to make a crust also you don't have to cook any vegetables before baking, so it saves up a lot of time and make the recipe a lot easier. The best part about this recipe is they can be made in advance. As you don't need a lot of preparation to make these full of flavor tasty quiches you can make them anytime you want. You can make and store them in a bunch and you got breakfast already done for the entire weeks. They are also great to take it to your tiffin.

Mini Chicken Quiche
Recipe in English:
Ingredients:
Chicken Filling:
-Makhan (Butter) 2 tbs
-Hara pyaz (Green onion) white part chopped ½ Cup
-Lehsan (Garlic) chopped 2 tsp
-Chicken small cubes 1 & ½ Cups
-Shimla mirch (Capsicum) chopped ½ Cup
-Kali mirch powder (Black pepper powder) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Mustard paste 1 tsp
-Anday (Eggs) 2
-Cream 1 Cup
-Onion powder ½ tsp
-Dried oregano ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Lehsan powder (Garlic powder) ½ tsp
-Cheddar cheese grated ½ Cup or as required
Short Cut Pastry:
-Maida (All-purpose flour) sifted 3 Cups (450 gms)
-Makhan (Butter) chilled 225 gms (cubes)
-Namak (Salt) ¼ tsp
-Cheeni (Sugar) 1 & ½ tsp
-Doodh (Milk) 6 tbs
Directions:
For Chicken Filling:
-In frying pan,add butter & let it melt.
-Add onion,mix well and sauté until translucent.
-Add garlic and mix.
-Add chicken and mix well until changes color.
-Add capsicum and mix well for 2 minutes.
-Add black pepper powder,salt,mustard paste,mix well and cook for 2-3 minutes & let it cool down.
-In bowl,add eggs,cream,onion powder,dried oregano,black pepper powder,garlic powder and whisk well & set aside.
For Shortcut pastry:
-In chopper,add all-purpose flour,butter and pulse for 3-4 times.
-Add salt,sugar and chop well.
-Gradually add milk and chop until crumbled.
-In bowl,add crumbled mixture,bring together and knead until dough is formed.
-Cover with cling film and refrigerate for 30 minutes.
-Sprinkle flour on dough and rolled out dough with the help of rolling pin.
-Cut into rough shape with the help of the cutter.
-Grease muffin or cupcake tray with cooking oil and place rolled dough,set and prick with fork (makes 10-12).
-Bake in preheated oven at 200 C for 5 minutes then take out from oven and rest for 5 minutes.
-On half cooked pie shells,add cooked chicken filling,prepared egg+cream mixture and cheddar cheese.
-Bake in preheated oven at 180 C for 20-25 minutes.

-Shimla mirch dal dein aur 2 minutes kliya ache tarhan mix karein.
-Kali mirch powder,namak aur mustard paste dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein & thanda ker lein.
-Bowl mein anday,cream,onion powder,dried oregano,kali mirch powder aur lehsan powder dal ker ache tarhan whisk ker lein & side per rakh dein.
For Shortcut pastry:
-Chopper mein maida aur makhan dal dein aur 3-4 dafa pulse ker lein.
-Namak aur cheeni dal ker chop ker lein.
-Thora thora ker ka doodh shamil karein aur crumbled hunay tak chop ker lein.
-Bowl mein crumbled mixture dal dein aur ghond ker dough tayyar ker lein.
-Cling film sa dhak dein aur 30 minutes kliya refrigerate ker lein.
-Dough per maida chirak dein aur rolling pin ki madad sa bail lein.
-Cutter ki madad sa round shape mein cut ker lein.
-Muffin/cupcake tray ko cooling oil sa grease karein aur rolled dough rakh ker set ker lein aur fork ki madad sa prick ker lein (makes 10-12).
-Preheated oven mein 200 C per 5 minutes kliya bake ker lein phir oven sa nikal lein aur 5 minutes kliya
-Half cooked pie shells mein cooked chicken filling,tayyar anday+cream ka mixture aur cheddar cheese dal dein.
-Preheated oven mein 180 C per 20-25 minutes kliya bake ker lein.

Simple quiche recipes - How to make mini quiches
These individual-sized quiches are just the thing to perk up a brunch table. They taste great, they're easy to make, and they're darned cute. Jenny Flake, a former Pillsbury Bake-Off finalist, shows us how it's done.
Quiche recipe How to make mini quiches
1. Heat oven to 350°F. Spray 16 (2 3/4x1 1/4-inch) muffin cups with cooking spray.
2. Separate each can of crescent dough into 8 triangles. Press 1 triangle on bottom and up side of each muffin cup.
3. In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add eggs, one at a time, beating well after each addition. Stir in onion, spinach, salt and pepper until well mixed. Fold in cheese. Fill each cup to the top with egg mixture (do not overfill).
4. Bake 15 to 20 minutes or until knife inserted in center comes out clean and edges of rolls are golden brown.
5. Remove mini quiches from the pan and serve warm.
Pillsbury's mini quiche recipe makes 16 servings.
