How To make Mint Chocolate Truffles (Lowfat)
Ingredients
1/3
cup
mint-chocolate, semisweet morsels
4
oz
cream cheese, lowfat/nonfat
16
oz
powdered sugar, package, sifted
1/4
cup
cocoa, unsweetened
1/4
cup
powdered sugar, sifted
2
tablespoon
mint-chocolate, semisweet morsels
Directions:
Place 1/3 cup morsels in a medium glass bowl, and microwave at high 1 minute or until morsels are almost melted, stirring until smooth. Let cool.
Add the softened cream cheese to melted morsels, and beat at medium speed of a mixer until smooth. Add 1 (16 oz.) package powdered sugar to cheese mixture; beat until well-blended.
Press mixture into a 6-inch square on heavy-duty plastic wrap, and cover with additional plastic wrap. Chill at least 1 hour.
Remove top sheet of plastic wrap; cut mixture into 48 squares. Roll each square into a ball, and place on wax paper. Roll half of balls in cocoa; roll remaining balls in 1/4 cup powdered sugar.
Place 2 tablespoons morsels in a heavy-duty zip-top plastic bag, and microwave at high 1 minute or until morsels are softened. Knead bag until smooth. Snip a tiny hole in corner of bag; drizzle chocolate over balls rolled in cocoa. Serve at room temperature.
Note: Store truffles in a single layer in an airtight container in freezer for up to 1 month. Let stand at room temperature 1 hour before serving.

Healthy Chocolate Mint Protein Muffins Recipe (Low Calorie) | Sweet Guilt Free Dessert & Snack
Chocolate protein muffins are always one of my favourite snack foods to make on the weekend and enjoy during the week as a guilt free dessert in the evenings or as a low calorie high protein sweet snack!
This one also has a wonderful hint of mint which works so well with the rich chocolate flavour!
This low calorie high protein mint chocolate muffin recipe is not only darn delicious, but did I mention each gorgeous little choc-mint muffin comes in at only 91 calories, and packs in impressive 9g of protein too! The extra protein makes these babies super satisfying and of course helps us to reach that all important protein goal too!
Now a lot of chocolate protein muffins can turn out dry and rubbery, so I did quite a bit of work on this recipe to ensure they are moist, without adding additional calories from oil or butter which you'd find in regular baked goods! I've got two little ingredient tricks for these chocolate mint protein muffins that keep them soft and moist all week long!
These are a great sweet meal prep idea too if you make a batch of 12 - as you'll have two for each day of the week!
Feel free to make your own flavour combinations using the base recipe of the chocolate protein muffins and adding in your own favourite flavours!
I really hope you love the recipe as much as I loved creating it for you!
