How To make Mint Spritz Cookies
1 1/2 sticks margarine
softened
2 eggs :
whipped
1 tsp pure vanilla extract
1/4 tsp peppermint extract
5 drops green food coloring
2 c unbleached flour
1/3 c granulated sugar
1/4 tsp salt
Preheat oven to 350. Prepare a baking sheet with cooking spray; set aside. In a mixing bowl, combine margarine, eggs, vanilla extract, peppermint extract extract, and food coloring. In another mixing bowl, combine flour, sugar, and salt. Mix wet ingredients with dry ingredients just until moistened. Spoon dough into a cookie press fitted template of desired shape. Press cookies 2" apart onto prepared baking sheet. Bake 10 to 12 minutes, or until golden brown.

1 cup unsalted butter softened to room temperature (226g)
¾ cup sugar 150g
1 ½ teaspoons vanilla extract
1 large egg yolk
1/2 teaspoon salt
2 1/4 cups all-purpose plain flour (295)
You will need a cookie press for this recipe!

00:30 Preheat oven to 350°F (175°C).
Combine butter and sugar in a large bowl and use an electric mixer to beat until creamed.
Add vanilla extract and salt and stir until well-combined. Be sure to scrape down the sides of the bowl using a spatula to ensure ingredients are well-incorporated.
Add egg yolk and beat until combined
01:38 With mixer on medium-low speed, gradually add flour until completely combined (you will most likely need to scrape down the sides and the bottom of the bowl several times for this, as the mixture is fairly dry and crumbs tend to settle at the bottom of the bowl).
02:26 Break off about 1/2 cup of dough and use your hands to form it into a log.
Insert cookie dough log into the tube of your cookie press and fit with your preferred tip. Place cookie press directly on an ungreased cookie sheet and use press to squeeze out one cookie. Squeeze out cookies in rows, spacing at least 1 apart.
03:59 Decorate with sprinkles, if desired, and transfer to 350°F (175°C) oven. Bake for 10-11 minutes or until edges are just beginning to turn a light golden brown.
Allow to cool for at least 5-10 minutes on baking sheet before using a spatula to gently scrape them off the cookie sheet and transfer to a wire cooling rack to cool completely.

-It's beginning to look a lot like Christmas! Today, join Fr. Barry Langley, OFM as he shares his family recipe for Assorted Christmas Spritz Cookies. Serve these sweet treats for your close family and share your results with us! Do you have any other favorite cookie recipes?
Ingredients
-1 cup shortening
-½ cup sugar
-½ cup brown sugar
-1 egg
-2 ½ cups of flour
-¼ tsp salt
-¼ tsp baking soda
-2 tbs lemon juice (for lemon spritz)
-1 tsp lemon zest (for lemon spritz)
-1 tbs almond extract (for almond spritz)
-1 tsp vanilla extract (for caramel spritz)
To Prepare:
Preheat oven to 300°. (350° for standard oven.)
Using a stand mixer, cream your shortening whilst preparing your dry ingredients in a separate mixing bowl.
Add sugar and cream well. Scrape sided of the mixing bowl and whisk, and beat in one egg and flavor extracts (lemon, almond, and vanilla, depending on the dough). Cream well.
Add a few drops of food coloring of your choice and continue to cream the mixture. Slowly add the dry ingredients to the creamed mixture, sifting in a little bit at a time.
Fill cookie press with finished dough. (If you do not have a cookie press, you can roll out the dough and use cookie cutters.)
Use your favorite candies, sprinkles, and edible glitter to decorate cookies before putting them in the oven.
Bake at 300° for 8 to 10 minutes. Allow cookies to cool completely before packaging. (350° in a standard oven.)
Use cupcake wrappers to bundle and distribute. Enjoy!
