How To make Mtk's Sauced Shrimp
1/2 c Sour Cream
1/4 c Mayonnaise
2 tb Chili Sauce Or Tomato Sauce
1 tb Fresh Lemon Juice
1 tb Drained Horseradish
1 1/2 ts Worcestershire Sauce
1/2 ts Tabasco Pepper Sauce
1 1/2 ts Curry Powder
1 tb Finely Minced Mango Chutney
2 tb Drained Capers
2 lb Shrimp, Cookked, Shelled
-And Deveined 1 tb Chopped Fresh Parsley
Martha Tupper Kay, a special lady from Mississippi, created recipes for McIlhenny Company for many years. She was famous for her shrimp sauce, which has a deliciously complex mix of condiments and spices. If you prefer, the sauce can be served on the side, for dipping. ~------------------------------------------------------------------------- In a large bowl, stir together the sour cream, mayonnaise, chili sauce, lemon juice, horseradish, Worcestershire sauce, Tabasco sauce, curry powder, chutney and capers. Pour the sauce over the shrimp and toss to coat. Refrigerate for several hours. To serve, mound the shrimp in a serving dish and sprinkle with parsley and additional capers, if desired. BEST Seafood Salad Italiano/Cerviche. Squid Catch & Cook #1
This is my first ever CATCH & COOK VIDEO. I apologize for the use of the cell phone video but that's all I had available for this particular trip. I plan on doing another annual squid trip this year in early May and I will capture it on Go Pro and it'll be higher quality for sure.
so this recipe is one of my squid favorites for sure. it's roots are definitely Italian and there's a piece of Latin and Asian influence or 2 in my version.
RECIPE INCLUDES:
3 TO 4 lbs of cleaned squid
1 to 2 lbs of cleaned / de - vained shrimp
1 sliced red onion
3 two 4 stalks of cleaned, sliced celery
3 to 4 table spoons of fresh chopped cilantro
* the juice of 3 or 4 fresh squeezed lemons
1 teaspoon of fresh chopped garlic
1 teaspoon of fresh cracked Mediterranean Sea salt
a liberal drizzle of EVOO - Extra Virgin Olive Oil
a liberal drizzle of rice vinegar
boil pot of water add a liberal shot of white vinegar, 2 table spoons of Old Bay Seasoning and 2 bay leaves.
Once boiling add shrimp for no more than 90 seconds. strain out and let cool.
Bring to boil again then add cleaned squid. let its in pot for 90 seconds and strain out in a colander in sink. Immediately cool it by running cold tap water on it to prevent over cooking. let strain out and cool in colander.
have other ingredients chopped and prepared in advance and add everything into a large bowl and mix thoroughly.
Serve chilled with a good hot sauce on the side if you like. Maybe a loaf of warm Italian bread and butter, or salsa and nachos, or guacamole. ENJOY !!! let me know what you think of it!
