How To make Navy Bean Soup Cuban Style
-JUDI M. PHELPS 1 c Navy beans; dried OR
3 Cans great northern beans;
-15-oz size 2 1/2 qt ;water
2 Bay leaves
1/4 c Extra-virgin olive oil
4 Cloves garlic; finely
-chopped 1 ts Oregano
2 oz Piece salt pork; rind
-removed, cut in small -pieces 1 lg Onion; finely chopped
1 Green pepper; cut in strips
8 oz Can tomato sauce
1 md Potato; peeled and cut in
-chunks 1 Butternut squash; seeds
-removed and cut in chunks 1/2 lb Boneless smoked ham; diced
Salt and pepper to taste Rinse dried navy beans in cold water, pick over to remove foreign particles, and soak covered in water overnight. Drain beans and place them in a large saucepan with 2 1/2 quarts water, bay leaves, and salt pork. Bring to a boil, reduce heat, and simmer, covered, until tender, 1 to 1 1/2 hours, adding water if necessary. (If using canned beans, the above step is unnecessary, since beans are already cooked.) In a medium-size skillet, heat olive oil and saute onion, green pepper, garlic, oregano, ham, and tomato sauce for 10 minutes. In a separate saucepan, boil squash chunks for 5 minutes. Remove from water, adding same water to tomato mixture. Peel squash. When beans are tender, add tomato mixture, potato, salt, pepper, and squash. Continue cooking another 30 minutes. Ingredients:
1 or 2 ham hocks
1 large onion - diced
3 medium carrots - shredded or diced
1 pound dried cannellini beans soaked overnight, or 4 cans
6 cups low sodium chicken stock
3 cloves minced garlic
1/2 teaspoon thyme
salt and pepper to taste
Combine all ingredients except the salt/pepper in slow cooker crock
Cook 4 hours on high, 6 hours on high or until beans are the consistency you like
1 hour prior to being done, smash about half cup of beans against side of crock to thicken sauce.
After finished cooking, taste again and season with salt/pepper as needed.

Cuban White Beans
Cuban White Beans
2 cups small white beans (dry not canned)
8 cups of water (possibly more if liquid evaporates after beans have softened - enough to cover vegetables)
Olive oil (when softening the beans and also at the very end)
1 large onion chopped
1 green pepper cut into 3 or 4 large pieces
6 large garlic cloves minced
1/3 cup of tomato puree
3 small carrots or 1 large cut into large chunks
1 ½ tsp salt
1 tbsp Apple cider vinegar
Butternut squash cut into chunks (optional but recommended)
Chorizo (optional)
Soften beans with the olive oil only in the pressure cooker for 40 minutes
When beans are completely tender, add all other ingredients except for the vinegar. Check that you have sufficient amount of water. Better for it to have a little too much than not enough.
Cook for an additional 10 minutes in the pressure cooker until all vegetables are tender. Check for salt. Add the vinegar and an additional 1 – 2 tbsp of olive oil. If the beans are a little watery, let them cook down a little. You want a nice thick soup! Enjoy as a soup in a bowl or served over white rice!

2 tablespoons fresh lemon juice adjust to taste
½ cup roughly chopped fresh parsley/ cilantro
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon chili flakes adjust to taste
Salt to taste
Ground black pepper to taste
1 tablespoon olive oil
3 cups vegetable stock
1 cup coconut milk
