Vanilla Bean Yogurt and Nectarine Parfait with Candied Nuts

INGREDIENTS:
4 {4 oz} Vanilla Bean Activia Dessert Cups
3 Nectarines {4 if smallish}, diced large
1 wedge of Fresh Lemon {2 if you want it real lemony}
1 tablespoon White Granulated Sugar
4 oz Pecans
4 oz Walnuts
1/2 {scant} cup White Granulated Sugar
1/8 teaspoon Cinnamon
1/8 teaspoon Kosher Salt
Egg Whites from one Egg
DIRECTIONS:
Combine the Nectarines with the lemon juice and sugar. Toss, cover and refrigerate until ready to use.
Preheat oven to 250 degrees and butter a small baking sheet. Combine the sugar, cinnamon and salt in a small bowl and set aside. In a medium sized bowl whisk egg white with a splash of water until frothy. Add the nuts and toss until evenly coated. Next add the nuts to the cinnamon and sugar mixture and toss again until coated. Spread sugared nuts onto prepared baking sheet and bake for 30 minutes, tossing every 10 minutes. Let cool.
Parfait Assembly:
Add some of the nectarines to four glasses and top with a third of the vanilla bean yogurt. Layer with fruit again, then the other third of the yogurt and repeat one more time. Top with candied nuts and serve!

EAT | Peach and Blueberry Greek Yogurt Cake
If you're looking for an easy but impressive summer dessert, I think you'll love this greek yogurt cake. Feel free to mix up the fruit on top. I love to serve it with some raspberry sauce. It also makes a fantastic hostess gift because it can double as breakfast. So bring this to your next dinner party, and score some brownie points. Errr, cake points. Disposable Cake Pan:
INGREDIENTS
• 1.5 cup flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 stick unsalted butter, softened
• 1/2 cup sugar
• 1/2 cup brown sugar
• 1 teaspoon vanilla
• 2 egg
• 3/4 cup greek yogurt (2% or full fat)
• 1/3 cup fresh blueberries
• 1 large peach, sliced thinly
DIRECTIONS
1. Preheat oven to 350. Butter your pan (either a 9 in. cake pan, springform pan or disposable pan).
2. Whisk together flour, sugar, brown sugar, baking powder and baking soda in a small bowl.
3. In a mixer, beat eggs, vanilla, butter and greek yogurt.
4. Slowly add dry ingredients and mix until combined.
5. Pour batter into pan and spread evenly. Top with peaches and blueberries in any pattern you like.
6. Bake for about 30-45 minutes depending on which pan you use (either way start testing at 30 minutes because this cake tastes best when not overcooked).
7. Dust with powder sugar or some raspberry sauce (just puree frozen raspberries in a food processor until smooth).

Fresh Peach Cake

Ingredients
1/4 pound (1 stick) unsalted butter, at room temperature
1 1/2 cups sugar, divided
2 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
3 large, ripe peaches, peeled, pitted, and sliced
1/2 cup chopped pecans
Directions
Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. In a small bowl, combine the remaining 1/2 cup sugar and the cinnamon.
Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.
Bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.
