How To make North Carolina Chopped Barbecued Pork
1 1/2 lb Pork shoulder roast
1/2 ts Salt
1/2 ts Celery seed
1/16 ts Cinnamon, ground
3/16 c Vinegar, cider
1/4 c Catsup
1/4 ts Chili powder
1/4 ts Nutmeg, ground
1/4 ts Sugar
1/2 c Water
Vinegar, cider; to taste Sauce, Tabasco; to taste Brown roast in a small amount of fat and place in a Dutch oven. Mix the next 9 ingredients in a saucepan and bring to a boil. Pour over roast and cover. Bake in a preheated 325^ oven, 40 minutes to the pound, until done, basting occasionally with drippings. Transfer roast to a chopping board. Remove meat from the bone and chop into fairly fine pieces. Season to taste with additional vinegar and hot sauce. Serve hot with coleslaw and corn bread. Sylvia's comments: I found some stew pork marked WAY down, bought several packages ($.99/lb!) and stuck them in the freezer. Then I put all the ingredients, including the still-frozen pork, in the crockpot this morning. Tonight it was done, I just mashed up the meat with a fork and knife and served it over rice. The vinegar produces a very interesting taste. However, it came out kind of soupy; next time I'll leave out the water and increase the catsup. This is the most popular barbecue dish in North Carolina, and, as far as we know, it is indigenous to that state. • 1 tsp Ground Black Pepper
• 1 tsp Ground White Pepper

• 1 tsp Sugar in the Raw
• 1/2 tsp Garlic Powder
• 1/2 tsp Onion Powder

????Muddy Water Pig Mop????
• 2C Apple Cider Vinegar
• 1-1.5 tsp Kosher Salt
• 2 tsp Crushed Red Pepper
• 2 tsp Ground White Pepper
• 1 tsp Ground Red Pepper (not Cayenne)
• 3/4 tsp Ground Black Pepper
• 6 TBS Light Brown Sugar
Let Sit a Few Hours to come together, Overnight is Best!
????Kickin' Pig Dip????
• 3/4c Distilled White Vinegar
• 1/4c Apple Cider Vinegar
• 1/4c Apple Juice
• 3 TBS Light Brown Sugar
• 1 tsp Kosher Salt
• 1 tsp Ground Black Pepper
• 1 tsp Crushed Red Pepper
• 1/2 tsp Ground Red Pepper (not Cayenne)
• 1 TBS Honey ( Optional, I always add it)
• 4 TBS Ketchup
• Wack or two of Hot Sauce
Mix Together let Sit a few Hours,
Overnight is Better, a Few Days is Best!
????Carolina Style Red Slaw????
• 14oz Bag of Coleslaw Mix
• 1/2c Kickin' Pig Dip
• 1/4c Muddy Water Mop Sauce
• 2-3 TBS Ketchup
• 1 TBS Sugar
• Black Pepper to Taste
• Add Ingredients to a bowl, mix, taste, add additional ingredients to your liking
• Cover, toss in the Fridge to chill.

North Carolina Pulled Pork + Homemade Sweet Coleslaw
Years ago a buddy from North Carolina introduced me to a pulled pork sandwich topped with coleslaw. I didn't think I would like it, but the sweetness and moisture from the slaw on top of sweet pulled pork was an instant favorite.
In this recipe and video we add another North Carolina staple, Cheerwine, to make a delicious BBQ sauce. This classic southern, cherry soda is truly the cherry on top of this sandwich!
