WALDINE VAN GEFFEN VGHC42A 2 Boneless pork loin roasts :
2 1/2 lb ea (2 1/2 to 3)
1 c Water
2 ts Salt
2 c Ketchup
2 c Celery :
dice
1/3 c Steak sauce
1/4 c Brown sugar pack
1/4 c Vinegar
2 ts Lemon juice
20 hamburger buns :
(20 to 25)
Place roasts in an 8-qt Dutch oven; add water and salt. Cover and cook on medium-low heat for 2-1/2 hours or until meat is tender. Remove roasts and shred with a fork; set aside. Skim fat from cooking liquid and discard. Drain all but 1 cup cooking liquid. Add meat, ketchup, celery, steak sauce, sugar, vinegar and lemon juice. Cover and cook over medium-low heat for 1-1/2 hours. Serve on buns. Source: Taste of Home.

WOW, PACKED WITH FLAVOR!! Cooked low and slow, but what a payoff: super tender meat, perfect for a big family gathering or for when you want leftovers for other meals down the road. ❤
INGREDIENTS
1 1/2 Tbsp smoked paprika
1 1/2 Tbsp chili powder
1/2 tsp cayenne pepper
1 1/2 Tbsp onion powder
3 tsp dry mustard
1 1/2 Tbsp garlic powder
1 1/2 tsp ground cumin
2 tsp black pepper (to your liking)
6 Lb. Pork shoulder roast
• mix all ingredients together (set aside)
•Trim excess fat from roast, cut into four pieces
• rub seasoning well all over roast
• wrap well with saran wrap and marinate all night
NEXT DAY INGREDIENTS
•1 15oz.can sliced peaches in heavy syrup
• 1/4 cup Worcestershire sauce
• 1 C. diced tomatoes w/chilies (optional)
• 1 C. BBQ sauce (with Brown sugar)
• 3 onions cut into pieces
• Next day, PRE-HEAT oven to 300° (remove saran wrap and discard) cut onion into pieces and lay a bed in bottom of roaster
• salt meat to your liking
• place 4 pieces of meat on top of onions
• cover with lid and place in pre-heated 300° oven
• set timer for 2 hours
• 20 minutes before timer goes off simmer peaches with syrup, Worcestershire sauce, diced tomatoes with chilies, and BBQsauce in a saucepan
• after 2 hours, take roaster out of oven and
skim off fat from the cooking liquid
• pour mixture into roaster and stir together
• add brown sugar if you want it sweeter.
• cook approx 3 more hours till falling apart and well cooked (approx 5 total hours)
• when pork is ready transfer to cutting board and cover with aluminum foil
skim the fat from the cooking liquid, then bring liquid up to a low boil
• pull the pork shoulder to shreds and transfer to serving bowl and pour liquid over meat then serve.
☆ careful with hot roaster and keep children away from stove
