How To make Oatmeal Choco Chip Cake
1 3/4 c Boiling water
1 c Uncooked oatmeal
1 c Brown sugar
1 c Granulated sugar
1/2 c Margarine
2 Eggs
1 3/4 c Unsifted flour
1/2 ts Baking soda
1/2 ts Salt
1 tb Cocoa
1 lg Packag chocolate chips
3/4 c Walnuts; chopped
Recipe by: Doris and Art Guyer 1. Pour boiling water over oatmeal; let stand at room
temperature for 10 minutes 2. Add sugars, margarine, and eggs; beat. 3 Add flour, soda, salt, cocoa and mix thoroughly.
4. Add half of chocolate chips and blend in 5. Pour into
greased 9x13 inch pan. 6. Sprinkle remaining chocolate chips and walnuts on top.
7. Bake at 350 degrees for 35 minutes.

Breakfast that tastes like dessert. These are my healthier 4 Ingredient fudgy overnight oats. Jan 3,2021 is the one year mark since I posted these overnight oats that went viral on my social media pages. In 365 days I gained over 270,000 new friends on Instagram and 850,000 on TikTok and I couldn’t be more grateful for you all. Thank you for being here and being the bestest friend a girl could ask for. This recipe makes one portion and you will need:
Ingredients:
½ cup rolled oats — I use quick cooking but any rolled oats work
1/2-1 tablespoon maple syrup or any sweetener you like
2 teaspoons unsweetened cocoa or cacao powder
½ cup unsweetened almond milk or any you love
**Please Note: Protein powder is optional but you will probably need a touch more milk. I added shaved dark chocolate on top for presentation but you can also add some cacao nibs as well. Feel free to improvise and make it to taste. Minimum of 3 hours in the fridge or even overnight and it will last for 3-5 days so you can definitely prep ahead. i don’t like to count calories as different brands hold different values but mine were 250 calories total. You can eat them cold which is what I do or heat them up but you might need a touch more milk if you do.
Directions:
Add all of the ingredients to a mason jar or even a bowl if you don’t have a mason jar.
Give it a really good stir and refrigerate for a minimum of 3 hours or until it’s nice and pudding- like.
Feel free to prep ahead and enjoy.

BETH OATMEAL CHOCOLATE CHIP COOKIES
Makes 15 3” Cookies
*PRINT RECIPE HERE*
INGREDIENTS:
½ cup (120g) butter, softened
½ cup (100g) white sugar
½ cup (90g) brown sugar
1 egg
1 tbsp (15ml) vanilla extract
¾ cup (90g) all-purpose flour
½ tsp (2.5ml) baking soda
½ tsp (2.5ml) salt
¾ cup (45g) Old Fashioned Oatmeal
¾ cup (110g) Dark Chocolate Chips
1/3 cup (50g) walnuts, chopped
1/3 cup (50g) unsweetened shredded coconut
METHOD:
Preheat oven to 350F(176C).
In the bowl of an electric mixer, beat together the butter and sugars until light and fluffy. About 5 minutes.
Then add the egg and vanilla extract. Beat together.
In a separate, small bowl whisk together the flour, baking soda, and salt. Add the dry ingredients to the mixer and combine, scraping down the sides as needed.
Then add the chocolate chips, nuts, and coconut. Beat to combine.
Line a baking sheet with parchment paper. Then scoop out 6 scoops of dough with an ice cream scooper (2 oz size).
Bake on the lower third rack for 15 minutes. Edges of cookies will be golden brown and centers will be just set. They should not look wet, but “just set”. Removing them at this stage will make them nice and chewy!
Allow the cookies to cool for 10 minutes on the baking tray. The residual heat from the tray will continue to set the centers.
Transfer the cookies to a cooling rack and allow to cool for 30 minutes (if you can stand it!) the flavors will be even better as they cool, and the cookies will have a beautiful chewy texture!
