Full printable RECIPE :
INGREDIENTS
2 cups sugar
1 cup whole milk
½ cup evaporated milk
½ teaspoon salt
3 tablespoons unsalted butter
2 teaspoons vanilla
INSTRUCTIONS
Line a baking sheet with parchment paper and set aside. In a medium saucepan combine sugar, whole milk, evaporated milk and salt. Heat over medium and stir constantly until sugar dissolves and mixture comes to a boil.
Reduce heat to medium low and cook until mixture reaches 240F/116C on a candy thermometer. Stir frequently to prevent burning. If you do not have a candy thermometer, drop some of the mixture into cold water. If a soft ball forms, it is ready. If you would like a firmer fudge, cook a few minutes longer. In total it should take about 30 minutes. Remove from heat.
Add butter but do not stir. Allow the mixture to cool in the pot until the butter is melted and the bottom of the pot feels very warm to touch but not hot.
Add vanilla and beat vigorously with a spoon until the fudge begins to thicken and lose its gloss. Quickly spread onto the parchment lined baking sheet to form a slab of your desired thickness. Cool for 2-3 hours before cutting into squares. Fudge tastes best a day or two later.

Homemade Old fashioned Fudge
Here is the recipe!
3 cups Sugar
2/3 cup baking cocoa (I used Hershey's)
1/8 tsp salt
1-1/2 cups milk
1/4 cup butter
1 teaspoon vanilla extract
Line a 8-9 inch pan with foil. cover foil with butter. Mix sugar, cocoa, and salt in heavy 4 quart sauce pan.Cook over medium heat, stir constantly, until mixture comes to full rolling boil. Then boil without stirring until thermometer reaches 234 degrees. You can test mixture by dropping small amount into ice cold water. It should form a small ball and flatten, esp when removed. (Don't allow thermometer to touch bottom of pan). Remove from heat, add butter and vanilla, and do not stir! Cool at room temperature to 110 degrees. Beat with wooden spoon until fudge thickens and is about to lose it's gloss (approx. 7 mins.). Quickly spread on prepared pan and cool completely. Store in tightly covered container at room temperature.
